You can always freeze a few bags. I've been very successful with freezing chocolate and it keeps me from eating it too fast!

I think I might have to get out my Fondue Pot. That much chocolate would call for a Fondue Party complete with strawberries, marshmallows, and any other dip friendly fruit I have on hand.

If I had the chocolate, I'd eat it and get fatter and be happier! Ha. Or I would make Caramel Toffee Bars and use the chocolates as the topping. YUMMY. I made them last weekend for Sunday dinner.

Chop them in half. Make a batch of peanut butter cookies. Wrap a ball cookie dough around it and bake it. YUMMO!! Or you can make brownies and put them on top, melt under the broiler for a minute or two and spread like frosting.

You might want to plan on feeding mom something else if you have an Estro-fest. She tends to go to sleep after eating chocolate!

You could melt some of it down with margarine to make a chocolate sauce for ice cream. Our friend David used to do this -- it was kinda like Magic Shell but tasted better. He was very adamant that you use margarine because he said it wouldn't work otherwise. Personally, I've never tried it, but I remember it being tasty when he made it for us.

You could also use it to make an amazing chocolate filling for cake. When I want to make a special chocolate cake, I make a filling recipe that I got in Bon Appetit (Dec 2001).

8 ounces milk chocolate
1/2 cup whipping cream
1 Tablespoon light corn syrup
1/2 teaspoon peppermint extract (optional)

1) Chop the chocolate finely and place in bowl. (I think I've even used the Magic Bullet to do this.)

2) Heat whipping cream and corn syrup to a simmer in a small pan. Pour over chopped chocolate. If using extract, add that. Let stand for 1 minute so that it melts the chocolate. Then, whisk until smooth.

3) Let stand at room temperature while you bake and cool your cake.

4) Beat the filling with an electric mixer until fluffy and lightened in color. If it doesn't get fluffy, it probably isn't cool enough. This almost always happens to me -- so I put it in the fridge for a little bit and then try again. Usually 10 minutes in the fridge works. It should be fluffy, thick & spreadable.

5) Spread between two completely cooled cake layers. Frost cake.
