What’s Cookin’ This Week

Well, I mentioned that food has been a bit of a battle this past week or so. Casseroles aren’t the biggest hit around here, I guess. It fluctuates from season to season. I’m not giving up on requiring kids to eat what is placed in front of them. But, I’m also not going to torture myself with nightly battles, either. I can save my freezer meals for post-baby when I’m starving — and they can eat cereal. Ha!

Since we are starting school today, I figure I need to make it easy on myself. So, here’s what the “cafeteria” is serving up this week.

Sundaycinnamon rolls and fruit
sandwiches and grapes
lasagna from a friend, french bread

Monday – Apple Pie – 1st Day of School Tradition!
chicken strips, fruit, cheese and crackers
Italian sausage, pasta, red sauce, steamed cauliflower

Tuesday – eggs and toast
pasta salad, veggies
Burgers, pasta salad, veggies and dip

Wednesday – cereal
PB&J, fruit
Chicken Packets for parents, Cheese bread for kiddos, salad (Since I make the chicken packets in pizza dough, it’s actually less work to make Cheese bread for the kids)

Thursdayblueberry scones and fruit
frozen pizza and veggies and dip
Catalan meatballs and potatoes, steamed veggies

Friday – waffles
lunch out to celebrate the first week of school!

Saturday – pancakes with Papa
Taco Soup
Baked Chicken, Macaroni Salad, corn
