Can't wait (!) to try some of these recipes. We have spent the last month or so working through all my really summerery recipes and enjoying them. Lots of dishes containing fresh veggies and fruit (sadly disappearing off the grocery shelves only to reappear at a much higher price and lower quality). Okay, that's depressing! So, now I am looking for heartier fall/winter fare. I love soup! And now that we are a family of 7 (4 of the male persuasion), we eat soups, stews and big pots of beans pretty often. I have a great vegetarian recipe. Harira is a N. African soup and very flavorful. It calls for safron which I leave out (I'm sorry, I do not pay $12 for spices!) Basic recipe follows: 4 cups vegetable broth
1 cup diced potato
1 can diced tomatoes
large diced onion
1 cup diced carrots
1 cup diced celery
1 can chick peas
1 cup lentils
1/4 tsp cinnamon
1/4 tsp turmeric
2 garlic cloves (I do 3)
olive oil
1 t fresh cilantro
lemon juice
Put 1 T olive oil in a stock pot. Add spices and heat at medium-low until aromatic. Add 4 c stock, carrots, celery, lentils and onion and cook until tender about 20 minutes. Stir in tomato, chick peas, and salt and pepper to taste. Heat through and serve with a squeeze of fresh lemon juice, and the cilantro on top. This is better the longer it sits! And it can be frozen, although the potatoes texture will change a little.

I am in a constant search for the perfect broccoli cheese soup recipe, so I'll definitely be trying this one. I've only had Panera's once, but as I recall, it was really good. Thanks for sharing! :)

I've not tried to make broccoli cheddar soup before, but cream of broccoli is one of my absolute favorites! I just made a triple batch of split pea soup using the recipe on crockpot365.blogspot.com-it's fabulous!

This soup recipe sounds gooooood. Oh how I love Panera. Except their coffee. They really should just let you have it for free. Along with napkins and straws.

This soup sounds great. I also love Paneras Broccoli Cheddar soup, I just hate paying for soup when it is so easy to make homemade. I posted my favorite recipe for Corn Choup, a Racheal Ray recipe.

This recipe sounds great. My broccoli cheese soup is good but uses Velveeta. I'd rather have real cheese so will have to give this one a try.

I posted a recipe for Corn Chowder on my blog.
