What’s Cookin’ This Week

This is one of my favorite weeks of the year. Thanksgiving is such a fun day of eating and snacking. And I love the leftovers. This year my brothers are hosting the Big Day, though FishPapa and I will each be cooking a turkey to contribute — one in the oven and one in his grill. We’ll also throw in some key side dishes.

More importantly, this is a big week for seeing family. I am the oldest of five, so when we all get together, it’s a houseful. In order to maximize family time, I need to make sure there’s plenty of food prepped ahead of time. This week we’ll get to spend time with my parents, my sister Janel and her hubby and girls, my sister Jamie, and my in-laws.

Here’s what I plan on fixin’ up this week:

Breakfasts:
homemade cinnamon rolls
oatmeal
eggs and toast
cereal and milk
turkey shaped breakfast rolls, scones, fruit salad
waffles and fruit and whipped cream
pancakes

Lunches:
chili, chips and cheese
tuna sandwiches
pasta salad
snacky lunch: crackers, cheese, fruit, veggies and dip
Thanksgiving Dinner!
turkey sandwiches
turkey potpie and green salad

Dinners:
eggs, bacon, toast, hashbrowns
Macaroni Grill kit, steamed veggies
Shredded beef enchiladas
Bean tostadas
Thanksgiving leftovers
Grilled Tri-tip and chicken, roasted potato salad, grilled veggies, cheese and bread
burritos, crockpot enchiladas, beans and rice
