What’s Cookin’

I’ve been a little overzealous in my grocery shopping lately. I didn’t mention that I went grossly over budget last month, did I?

Yeah, well, pride goes before the fall.

It was all good deals, really.

And a few splurges on Brie cheese and baguette that greatly helped my disposition.

And we were starting from scratch in a new home after moving.

But, I am hoping the sales won’t be really good this week, ’cause I hate to miss out. And this week I need to stay home!

Needless to say, I hope that I can cook great stuff from what’s in the pantry, especially since it is overflowing. An added plus to my week is that my friend Jessika is coming for three days to help me unload the garage of the 500 boxes stashed in there. Obviously, we don’t need anything that is in there since we’ve lived without it for six weeks. But, still, some things may be nice to have. We shall see.

Jessika and I have been friends for almost 15 years. She is near and dear to my heart, so I am really looking forward to spending a few days with her and her two kiddos. We haven’t seen each other in FIVE years! She has always been a great encouragement to me as a woman and a mom. Can’t wait!

She cracked me up last week when she said how pleased she was that I picked up ice cream and Rice Krispies! She knew what she’d be eating this week! One thing about having a flaunt-your-groceries-feature on your blog, everyone knows what’s in your cupboards.

So, Jess, here’s our plan — for food, anyway — this week:

Breakfasts
applesauce and oatmeal
Rice Krispies, milk and fruit
bagels and fruit and Peets coffee
raspberry muffins and smoothies
waffles with berries and whipped cream
pancakes
cinnamon rolls

Lunches
corndogs, fries, and fruit
tuna salad sandwiches for the kids (Salade Nicoise for the moms)
pasta salad
chicken noodle soup, cheese, bread
potstickers, rice, broccoli
leftovers

Dinners
White Chili, cornbread, veggies and dip
Macaroni Grill Alfredo pasta, Veg, Rolls
BLTs, Chips, Veggies & Dip
Shredded Beef Tacos, Beans, Rice, Fruit Salad (make twice as much meat, use half in Shepherd’s Pie)
Shepherd’s Pie, Green Salad
Homemade Pizza
Macaroni and Cheese, Veg, Fruit

    Sonshine, you’ll have to make those muffins. They are really good!

    Aimee, well, that depends on the day. Somehow the store bought just doesn’t taste as good as I remember it. And it’s a drive to the closest Peets, so I go back and forth between that and Starbucks. Plus, we have that budget thing to look out for. Still own two houses in KS. Ugh. I think you guys should move back, buy a coffee shop, and then give me a discount on Peets. ;)
