Easy Meals – FishMama Style

I didn’t plan it this way. But, when I looked at our menus this week, I realized it’s going to be a pretty simple and easy week in the kitchen. I am thankful to have a plan because that makes for one less thing to think about. And since I feel as if I am juggling so many things these days, simplicity is the way to survive.

To simplify my meal planning, I tend to do the same thing for breakfast on any given day of the week. Monday is oatmeal, Tuesday eggs, etc. etc. Again, this is just ritualizing breakfast so that brain function does not need to be at top capacity to put food on the table. Always a good thing.

I also enlist all the help I can get in making meals to feed my small army. I’ll be using my crockpot at least twice this week. It always helps me as the day approaches evening to know that the bulk of my work is already done.

A new twist that I am going to try is this little brainstorm:

The Pasta Salad Bar

1 pound cooked pasta, drained and tossed with Italian dressing
chopped tomatoes
sliced black olives
chopped cucumber
shredded carrot
crumbled feta
grated parmesan
garbanzo beans
cooked, cubed chicken
julienned bell pepper
any other veggies or toppings you like

Prepare pasta as directed above. Set out pasta and toppings and have diners assemble their own pasta salads. My guess is that if your kids are like mine, they’ll probably eat more veggies than you think they will if they get to build this salad as they want.

Here’s the week for me, easy peasy.

Monday
oatmeal and sauteed apples
turkey bagel sandwiches, veggies, and dip
spaghetti and meat sauce, spaghetti squash, green salad, bread sticks (crockpot) – Going to make this recipe, but sub browned ground meat for the Italian sausage.

Tuesday
eggs, bacon, and toast
tuna sandwiches on whole wheat, fruit
beans, rice, and quesadillas

Wednesday
cereal and fruit
snacky lunch
pasta salad bar

Thursday
mixed berry muffins, yogurt, and fruit
pasta salad, fruit salad
pork roast, mashed potatoes, vegetables, potato rolls (crockpot)

Friday
waffles
leftovers
grilled chicken, rice pilaf, veggies, salad

Saturday
pancakes
burritos
chicken and grilled veggie pizza

Sunday
cinnamon rolls
lunch out after church
roast turkey, mashed potatoes, stuffing, vegetables, cranberry sauce
