This cake-like dessert is one that my mother-in-law often made for us at the holiday time. It is simple and delicious. You will want to eat it all. It’s on my menu for next week.
Gingerbread
1 cup sugar
1/4 t. salt
1 t. ginger
1/2 t. cinnamon
1/2 t. cloves
1 c. oil
1 c. molasses
2 t. baking soda
1 c. boiling water
2 1/2 c. flour
2 eggs, beaten
In bowl combine sugar, salt, ginger, cinnamon, and cloves. Stir in oil, then molasses, mixing well. Mix baking soda into the boiling water and immediately stir it into sugar mixture. Gradually blend in the flour, then add the eggs.
Turn into a greased 9 x 13 inch pan. Bake at 350 degrees for 40-45 minutes. Makes 12 servings. Serve with Cream Cheese Topping and Rich Lemon Sauce.
Cream Cheese Topping
8 ounces cream cheese
1 T. milk
1/4 c. powdered sugar
1 t. milk
Mix cream cheese with milk, sugar and vanilla. Blend until smooth.
Rich Lemon Sauce
1/4 c. butter
1 c. sugar
2 T. flour
1 1/4 c. boiling water
1/2 t. grated lemon peel
dash of nutmeg
1 1/2 t. lemon juice
In a saucepan, blend the butter, sugar, and flour. Gradually add the boiling water. Add lemon peel and nutmeg. Boil 3 minutes. Remove from heat and stir in the lemon juice. Makes 1 1/2 cups.

I’ve never had this before. Somehow I don’t think gingerbread cookies/cakes,etc is very popular in my little corner of the world. I can’t recall anyone I know ever making gingerbread cookies or anything. But it sounds like a delicious recipe!
We don’t ever make gingerbread, but cream cheese topping??? Say no more!
I wrinkled up my nose, too, the first time I heard her say gingerbread. I only thought of the cookies – which I can’t stand. This, on the other hand, is fantastic, esp with the topping and sauce. Yum!
