What’s Cookin’

While I’ve approached meal planning in a number of ways in the past (here, here, and here), lately I am enjoying this plan out a whole month at a time. You can see my December Meal Plan here.

I brainstorm all the different meals that I could make with what’s in the cupboard or what I think might be on sale in the coming weeks. I divide them into categories (meat, poultry, and veg/misc) so that I can vary our meals. Then, each weekend I go through my list and choose 7 dinners for the week. This is a great way to save some time and brain space for me. And I need all the help I can get.

So, this week we’re having

Grilled Chicken Breast and Vegetables, Rice Pilaf, Cornbread
Costco Pizza
Carnitas Soft Tacos, Rice and Beans (not on the list, but I got a good deal on the meat)
Pasta Salad (OK, also not on the list, but this is a super easy dinner for us)
Chicken with Tomatoes, Feta, and Olives, Rice, Veg, Bread
Tamales, Beans and Rice
Minestrone Soup with Baguette and Butter
