What’s Cookin’ This Week

If you read my little story the other day, you know that I cheated a little on my Eat-From-the-Pantry Challenge.

Just for the record, I did NOT go over budget. On the contrary, midway through the month, I challenged myself not to do major shopping, but to allow myself milk and produce while we used up what we had. That little chips and bread splurge was my little cheat.

But oh – so worth it.

(I think it’s important to remember that our budget is to serve us, not the other way around. But that’s a post for another day.)

Here’s our updated menu plan for April as we work through what we have. FishPapa is fully on board and asked if we could bare the cupboards. We shall see….

Enchiladas, rice, and beans
PB Chicken
Chicken Smothered in Onions, mashed potatoes
Boules de Picolat, boiled potatoes, veg
Pizza and Salad
Sausage and Pepper Calzones and Salad
Bean Tostadas
Grilled Chicken and Vegetables, Rice Pilaf, Salad
Oven Baked Ribs, Potatoes, Salad
Spaghetti and Meatballs, Salad, Foccaccia
Beans and Rice
Pasta with Red Sauce, Veg, and Rolls
Carnitas Soft Tacos, Beans and Rice
Meatloaf and Rice or Potatoes, Veg, and Baguette
Taco Salad
Paella, Salad, and Baguette
Lemon Noodles, Grilled Chicken, Salad, and Bread
Hamburgers, Fries
Shredded Beef Tacos
Chili Dogs, French Fries, Salad
