This Week on URS: Mother’s Day Menu Ideas and Recipes

I hope you are all enjoying some kind of fiesta tonight. Last week’s URS generated so many delicious Mexican food recipes, there’s no reason not to. At our house tonight we are feasting on Pasilla Enchiladas, a recipe my sister shared with you here. She linked it to the Meatless Main Dish recipe swap.

It is so yummy. I don’t know why she doesn’t make it more often than once a year.

Wimp.

Honestly, it’s not hard at all, especially when you cheat like I did tonight in using store bought tortillas.

OK, enough sibling rivalry. This week on URS, we’re swapping recipes for Chick Food. Because, after all, Mother’s Day is that most joyous occasion where chick food is not only acceptable, it’s practically mandatory. So come back on Thursday and share your favorite meal ideas for Mother’s Day.

Links may include a special occasion recipe or meal idea that is within the realm of reason for a Mother’s Day celebration. You’re going to have to share a really good story and justification if you bring pork and beans to the table. It’s gotta fit the theme:

    I have our Mother’s Day brunch menu on my meal plan…it includes an amazing Apple Fritter recipe I just found and the Orance Pecan French Toast Casserole recipe that was a HUGE hit last Mother’s Day.
