Ultimate Recipe Swap: Camp Food

Summertime is the time to pack up your stuff and head out to the great outdoors. Camping is one great way to do that. I personally am looking forward to beach camping this summer. I don’t know that I can make camping with a toddler and a baby a habitual thing, but I want to go at least once, while the guys are going to enjoy a number of trips over the next few months.

While fresh air and nature are great, it’s also nice to have some home comforts, like showers, flushing toilets, and good food. The first time FishPapa and I went camping, he suggested we take the bachelor approach to food, including cooking beans in their cans on an open fire.

Ummm, no thanks.

My brothers, bachelors themselves, get those precooked meals in bags when they guide folks on adventure trips down canyons and such.

Instead, I like to marinate chicken breast ahead of time, prepare a caesar salad, and butter up garlic bread. FishPapa grills the chicken and bread and I pour salad dressing into the large ziptop bag of greens and shake. It’s easy and it is really good. Camping, at least car camping, doesn’t mean you have to eat like a hobo or an astronaut.

Here’s one of my favorite ways to pack chicken for camp:

Teriyaki Chicken
adapted from Williams-Sonoma Grilling

1/3 cup soy sauce
1/3 cup dry sherry
1/4 cup canola oil
1 teaspoon sugar
2 cloves garlic, minced
1 teaspoon ground ginger
4 boneless, skinless chicken breast halves, rinsed.

In large ziptop bag, combine soy sauce, sherry, oil, sugar, garlic, and ginger. Add chicken breasts to bag and massage bag to mix well. Double bag to protect against leaks. You can make this several days before your camping trip and freeze it at this point if you like; then it can thaw for a few days in the cooler. Otherwise, refrigerate or pack in ice in cooler until ready to cook.

Heat grill and cook chicken breasts until cooked through. Juices will run clear.

I don't think this is a "recipe" more of a fun menu that everyone liked. I get those hash brown patties in the freezer section(the ones that look like McD's) and frozen precooked sausage patties then we add cut up fruit or scramble eggs for on the side. The hash browns and the sausage patties fry up quickly in a frying pan, you need oil for the hash browns. Everyone is happy when I make this even me because it is easy and quick.

You know I love you, right? And your chicken recipe looks yummy. But I still wouldn't go camping. Just not gonna happen. ;)

Every morning when we go camping we bowl a HUGE pot of water and then each person takes a ziploc baggie and cracks a couple of eggs into their bag and then they can throw in green peppers, onions, cheese, mushrooms, sausage, whatever they want and then zip up the bag, make sure your bag is no more than 3/4 of the way full and then throw your bag in the water and let it sit in the water until it is done. Usually 10-15 minutes. YUMMY!! You can take them out and eat them straight from their bag or pop the bag open and plop your individual omelet onto a plate. They are WAY good and fun for everyone to do.

Love the camping pic. We have only been camping once since Chloe was born (2 years ago) and I am hoping to get out more this year!!
