Teriyaki Chicken (Ultimate Recipe Swap: Camp Food)

Summertime is the time to pack up your stuff and head out to the great outdoors. Camping is one great way to do that. I personally am looking forward to beach camping this summer. I don’t know that I can make camping with a toddler and a baby a habitual thing, but I want to go at least once, while the guys are going to enjoy a number of trips over the next few months.

While fresh air and nature are great, it’s also nice to have some home comforts, like showers, flushing toilets, and good food. The first time FishPapa and I went camping, he suggested we take the bachelor approach to food, including cooking beans in their cans on an open fire.

Ummm, no thanks.

My brothers, bachelors themselves, get those precooked meals in bags when they guide folks on adventure trips down canyons and such.

Instead, I like to marinate chicken breast ahead of time, prepare a caesar salad, and butter up garlic bread. FishPapa grills the chicken and bread and I pour salad dressing into the large ziptop bag of greens and shake. It’s easy and it is really good. Camping, at least car camping, doesn’t mean you have to eat like a hobo or an astronaut.
