Ultimate Recipe Swap: Feeding a Crowd

Summertime seems to be the season of get-togethers. Family reunions, birthday parties, softball team barbecues, graduation parties, and 4th of July get-togethers all congregate during the summer months. My inner Martha loves this. There’s nothing more exhilarating to me to have a crowd come feed at my house. Good thing I was born into a big family. Large gatherings are par for the course.

Unlike Martha, however, it’s just not my season to prepare multi-course sit down meals for many. Instead I do what places like Souplantation, Sweet Tomatoes, and Sizzzler do – I host a buffet. I try to organize them around a theme so that there’s some thread pulling all the dishes together.

If you and your 42 cousins were coming to my house, I might serve you one of the following:

Salad’s On! – A salad bar is great for summertime. Everything can be made ahead of time. It’s cool and refreshing. Prepare three to five different salads, just be sure to include some proteins to fill the men up and quiet their squawking. Serve bread and butter on the side.

Caesar Salad [5]
Rice and Bean Salad [6]
Potato Salad [7]
Pasta Salad [8]
Asian Chicken and Noodle Salad [9]
Baby Greens with Nuts, Cranberries, Turkey, and Blue Cheese [10]

Lots of Pasta – Practically everyone likes noodles. Make a large salad, garlic bread and a few choices of pasta dishes.

Shrimp with Noodles and Cream Sauce [12]
Lasagna [13]
Red Sauce with Meats [14]

Viva la Fiesta – Mexican food is simple and hearty. Provide a few different dishes, beans [16], and rice [17], and plenty of salsa [18].

Crockpot Enchiladas [21]
Shredded Beef Tacos [22]

And of course, the perfect summer dessert for a crowd is an Ice Cream Bar! Nothing too complicated there, just stock up on multiple flavors of sale ice cream and different kinds of cones.
