Ultimate Recipe Swap: Time to Picnic

Picnics are fun affairs. I love to pack up a lunch and eat outdoors, and so do my children. One of my favorites is the impromptu affair with In-N-Out Burger.

But, if I have time to plan, then here’s what we might pack – my recipe for A Great Picnic:

tablecloth (and tablecloth weights or clips if the wind is up)
paper plates, cups and napkins
plastic flatware
bug screens to cover the food
booster seat for the baby
pitcher of Old Fashioned Lemonade
Guacamole, Salsa, and Chips
FishPapa’s Favorite Italian Sandwich
Potato Salad, Pasta Salad, Bean and Rice Salad
Gramma John’s Crispy Crunchy Chocolate Chip Cookies

We love picnics too. I hope we can take several this summer.
Do you have a list of the upcoming themes for URS? I can't seem to find it anywhere.

We've been picnicking at the park after swim lessons this week and it's been a blast. I've been making different pasta salads everyday. One of my newest favorites though is a recipe I found for Watermelon Lemonade. So refreshing!

I make up a batch of Olive Oil Dough (from Artisan Breads in 5 Minutes a Day) and keep it in the fridge. Then, when we want to picnic, we make Oven Pockets in no time. Just roll out 3 or 4 ounces of the dough, layer with cheese, veggies, sauce, spices and anything else your heart desires. Fold over, crimp and slash the top. Make each person's slash a bit different. Bake at 400 degrees for 20-25 minutes. Delicious, and mighty portable!
