Baking time is upon us. The weather has shifted in many parts of the country and it’s perfect weather to pop an apple pie in the oven. Plus, sales on baking ingredients have started to spread. Now’s the time to stock up!
Everyone in our family loves to bake. FishPapa usually handles pancake duty while the kids help me prepare cookies, scones, brownies, you name it. Last week we tagged onto Money Saving Mom’s baking day – so fun to live tweet and smell yummy things coming from the oven. And last week I had an epiphany.
But, first some background….
You would think that after twelve years and six kids, I would have clued into the eating habits of small children. You know what I’m talking about — the half-eaten muffin, the donut devoid of its frosting and a millimeter of its top, the scone that looks like a rat nibbled it and dropped it on the kitchen floor. I’ve grimaced many a time at “man-handled” food that no one else really wants but which the offender has bored of.
Well, those days are over. I finally realized that I don’t need to make 8 scones from my recipe. I can make 30 mini-scones, or sconelettes, if you feel particularly froofy.
{Gasp.}
I can do this with brownies, too. How cute are brownies made in mini-muffin tins?
Oh, yes. We’re downsizing around here. That. is. for. sure. From now on, I’m going to make smaller size muffins, cookies, scones, and brownies. Heck! I might even make petit pancakes!
Not only will we have less waste, but I’m guessing that they’re going to love me — even more than they already do — when they hear my answer to the question, “How many can I have?” Have four! Yes, sir. This is the wave of the future.

Baking smaller items is a wonderful idea. Kids can be "fooled" into thinking they are getting more with 2 small cookies instead of one big cookie!
You made a very good point! Isn't that funny how all kids say "Can I have 4?"

I really need to buy a mini-muffin pan. Those bite-size brownies look perfect.
I love making miniature versions of my chocolate chip and mnms cookies. My son loves them and makes me feel better that he can eat one small cookie and not be loaded up by the sugar of one regular size cookie and still be satisfied!
Love you idea for mini baked goods. And we do mini pancakes sometimes which the kids love-great for seconds that they will actually finish.
Love that idea with the scones. I have a recipe to make them and I will have to remember this!
I LOVE making minis…not just for the kids but for me! They are just more fun to eat and you get more crunchy texture on your cookies!
Beware with the petite pancakes…my family eats twice as much pancake batter when I make them tiny. NO idea why!!! I discovered this when I tried the mini-pancakes with that organic batter in a can from Costco. They sampled the batter that way, so I naturally made a gazillion teeny pancakes. We went through the cans SO much faster when they were small…something psychological, I'm sure.
I've got a lot of great baked goods on my site but nothing recent.
I was thinking 'mini' too this week – I made petite pumpkin loaves and they are just so cute and taste great. I might make them for hostess gifts at Thanksgiving (and give 6, of course!)
