I freeze just the cheese sauce for macaroni and cheese. And, actually, it has worked in some other recipes as well (potato soup and chicken enchilada soup). Then I pull out the cheese the night before (or that morning) and when it's time to cook, I boil the noodles, add a bit of sour cream/butter, maybe a some cream cheese if I have it on hand and stir, letting the hot noodles melt everything (I do NOT aspire to healthy macaroni and cheese) and then add the cheese sauce. Sometimes I bake in the oven, sometimes we like it faster and less crunchy!I freeze just the cheese sauce for macaroni and cheese.
I freeze the mac and cheese before baking and it does fine. Same with the enchilada casserole. Freeze prior to baking.

My red sauce works for us. As for watery, I'm not sure. But, I usu reheat in a saucepan, stirring, and that brings everything back the way it should be.

Thank you for your encouraging blog! I have six children as well and have been cooking ahead and freezing for years, just to keep my sanity (what little I have left!!). I had a few questions for you. How do you freeze and reheat Mac'n'cheese? I've never tried that before. Does your red sauce freeze well? I tried it years ago and it turned really watery. I'm hoping your recipe will be better. Also, do you bake and then freeze the turkey enchilada recipe, or freeze it prepared, but not baked?
Thank you for the recipes!!

Looks good and very ambitious! I'm thinking of joining in, but most of mine will be prep work. Does chopping a bag of onions count? :)

I just checked out that mac and cheese recipe. Do you think it will freeze well with sour cream? I'd love to find a homemade mac and cheese recipe for the freezer!

Hope you have a productive day!
