Wintertime calls for hot, filling meals that warm you up and keep you energized. And it seems that family life is super busy during winter as well. You know what that means. The family cook needs some quick, cozy menu ideas.
At our house it might be beans and rice or a bowl of chili. But, one of my go-to meals is grilled cheese and soup. Not all my kids love grilled cheese sandwiches, but that’s okay. He makes himself toast. Sometimes I make soup from scratch; other times I pop open a can. Either way, we enjoy the meal.
Grilled Turkey and Brie on Whole Grain Bread
for each sandwich you’ll need:
2 slices bread
softened butter
1 slice roasted turkey
sliced Brie to cover the bread
thinly sliced red onion (optional)
Heat fry pan or griddle. Butter one side of each piece of bread. (When assembling, I stack two pieces, buttered sides together on a work surface and build my sandwiches. Then when I place them on the griddle, I put the bottom slice on top, buttered side up.) On the plain side of one piece of bread, stack turkey, red onion, and Brie slices. Place sandwich on hot griddle and cook until cheese is melted, turkey is hot, and bread is toasted. Flip as needed. Serve with a bowl of soup.

My quick fix is breakfast for supper with Grandma Macks Breakfast Casserole. I add sausage, green peppers, onions, tomaotes, etc.. anything I can find. It makes a huge dish that is easily reheated!

I was just thinking yesterday that I need to increase my quick-hot-lunch recipes in the box as the weather is turning colder and cold sanwiches are less and less desirable…. Needless to say I'm glad this is the topic today! I have nothing to add, still new to the mom thing…

I have several go-to easy and fast meals, but honestly my favorite is the same as yours! Usually I open two cans of soup, though, since I like tomato soup with my grilled cheese, and dh can't stand it. He usually gets beef vegetable instead. My little ones don't like soup at all yet, but their bellies are satisfied with just the sandwich and a little fruit.

Doesn't surprise me that your kiddo who doesn't like grilled cheese liked the turkey with brie on whole grain. My two year old has never liked standard-American-cheese-on sandwich-bread grilled cheese, but he loves grilled Lorraine swiss on pumpernickel rye. Go figure.:) He's a foodie in the making, I guess.

This would be really cool. Our standard after church lunch is soup and grilled sandwiches. Tomato soup with 1/2 can water and 1/2 can milk is a family favorits.

I made my friend a havarti & tomato grilled cheese one day during a playdate and she exclaimed that it was the best grilled cheese she had ever had. You might enjoy trying it sometime!

Turkey and brie sounds DIVINE!
Our quick-fix dinner consists of a rich, hearty "stew" made of the following:
2 cans Cream of Mushroom Soup
2 cans Tuna (Water packed, drained)
Leftover rice (to taste – we use about 3 cups cooked)
Prepare soup according to directions on the can, add the can of tuna, and serve in a bowl over the rice.
Usually we're bad and don't have a fruit or veggie serving with this. Seems like a great place to use V8 Fusion, hehehe.
