Nutritionists tell us that a great way to have a well-rounded diet is to include all the colors of the rainbow in our diet. (No, ketchup doesn’t count for red.) But, as you browse the produce aisle, try to include all the different hues and you’ve upped the substance in your family’s diet. You know that pretty colors can entice many a picky eater to try a new food.
Another great way to encourage good eaters is to teach your peeps to garden. Our kids have always loved to plant seeds and seedlings, water the garden, and check on the harvest. And each one will at least try whatever it is we’re growing.
Burpee has developed a rainbow vegetable garden that you can grow at home with your children. What a fantastic idea!

Last year this time, my boyfriend and I turned our nose up at any vegetable raw or even cooked. You would have thought we were a bunch of 8 year olds sitting at the dinner table… Fast forward through last year to the present, we made a 8′X10′ garden plot in our yard last year which was super hard work, but the reward was so worth it. We know try to incorporate fresh veggies (and lots of colors) into each of our dinners! Unfortunately we’ve moved to a smaller place, but we’re talking about participating in our local CSA so we can still have the wonderful rewards of fresh veggies!!!! (I never thought those words would come out of my mouth…)
There is nothing better than veggies from the garden in the summer, but I think I look forward to summer squash the most!

gotta be the loofah gourd! you can eat them (tasty) OR dry them after they mature and have your own loofah dish scrubbers etc! makes a great gift too!

I LOVE all veggies. Tomatoes, Orange Peppers, Green Beans, Eggplant…but what I love the most is spending time with my kids in the garden. Time to play, talk, and enjoy the summer sun! It’s wonderful to watch the kids and the plants “grow” in to something wonderful.

Fresh asparagus is our family favorite…We roast it at 425 degrees with some extra virgin olive oil, kosher salt and cracked pepper…you can’t go wrong! My 7 yr. old eats her body weight in it! It is yum to the ‘O’!

It’s so hard to choose a favorite vegetable. I really like so many. But if I were to look at it based on what I eat the most of, it would be a tie between tomatoes & potatoes (ignoring the fruit/veggie debate about the tomato). I don’t think I’ve EVER seen a dish made of either of them that I didn’t like. I’ll eat them any way you can make them. Or raw. Doesn’t matter.

My fave veggies would be tomatoes and cucumbers. My 4 yr old loves carrots, beans, tomatoes, cucumbers, and lots of fruit (I know, not a vegetable). It would be awesome for me and him to grow a vegetable garden together! He would love it.

Fantastic Giveaway! Favorite Veggie, that is a tough one. I’d say probably a pepper of some sort, either green, red, yellow or orange. But a close second would have to be broccoli or maybe cauliflower.

sugar snap peas…so easy to grow and my daughter can even help pick them! good raw, cooked, we even freeze the surplus to have in the winter…can’t wait till they are ready this summer.
My favorite is spinach. I can eat it like salad greens, on a burger or sandwich in place of lettuce, you name it. I LOVE the stuff!

I happen to love all Burpee products and this is great! My favorite veggie would be the bell pepper ( I know they say fruit because it has seeds). They are so versatile. I can make stuffed bell peppers or mix it in everything!!

Originally, I would have said tomato because they are so versatile, & you can do so much w/ the different varieties… enjoy them whole, garnish a salad, slice ‘em up & dip in a sweet sauce, put on a favorite sandwich, cook them up in a sauce, mix ‘em in a pasta salad… the list goes on, but like your previous commenter you’re right it’s not technically a vegetable. So, the next one that pops in my head is Edamame (Soy beans)… we love those little guys in our house… in fact my 4 yr. old can gobble down an entire bowl on her own – it’s the de-shelling thanks fun to her. Mmm… I’m wishing I had some now. Boil ‘em up sprinkle on some sea salt & you’ve got a deelish appetizer/snack!

I like a lot of different veggies, but my favorite is probably a big, juicy red tomato, hot from the garden, sliced with salt sprinkled on it! YummY!
My fav has got to be summer squash. Throw a little onion in the pot with it and you can’t go wrong. Just wish anyone else in my house would eat it. I’m working on them though.

Beets, tomatoes and red peppers. My grandparents had a giant garden when I was growing up, so I was lucky enough to be exposed to lots of good vegetables before I was old enough to turn my nose up at them. This year my goal is to try to do that for my 3 year old that’s getting a little picky by growing a variety of things in our garden. She’s usually game to try what she’s worked so hard to grow!
My new favorite is squash, so yummy drizzled with olive oil and roasted!!!

My daughter(2.5) absolutely loves veggies! My favorite has to be a yummy home grown tomatoe, but I try and use everything once… even the different ones in ethnic markets! My daughter asks for Broccoli every night for dinner lol … I don’t love brocolli cooked so I don’t know where she got it from! Oh and yummy asparagus has been on seasonal sales lately and I pull out the george foreman to grill it for a yummy summer taste!

There is nothing more delicious than a freshly picked tomato on a summer day.Especially after rescuing it from all of the Critters. Birds, Squirrels, Caterpillars etc…. and after watching it day after day! I can’t wait to get some in my planters here in Sacramento ,CA

My favorite vegetable……. that’s hard, I really don’t know a vegetable I dislike. I love peppers, egg plant, tomatoes (fruit), brussel sprouts, corn, cabbage, potatoes, carrots, beans of all types, onions,…….. all vegetables. I’m not a vegetarian, but I love my veggies!!
My fav is artichokes. I am finding tons of recipes that use eggplant and really want to try that — not something I grew up with — out of my comfort zone — but, hey, why not!

I have a new favorite vegetable. The lady at the health food store suggested I eat raw grated beets on my salads. I wasn’t sure I was going to like it, even though I like cooked beets. But I love raw beets on salad! But be prepared, the beets turn everything a nice shade of pink!

My favorite vegetable is tomatoes. Last year I grew two cherry tomato plants and my family loved those. This year in addition, I plan to grow two or three other varieties as well, in order to make and can lots of homemade salsa, tomato sauce, and tomato juice. Winning this would be perfect!

My favorite vegetable is parsnips. I love to slice and steam them and then serve them with a little butter, salt and pepper. Unfortunately, here in Florida, they are very expensive to buy and my “garden” is still a dream in my head. If I win, I can get it started!
