Cheesecakes, Chocolate Chip Banana Bread, and Cinnamon Rolls for the Freezer

I’m ready to call it a day, folks. I didn’t think doing side dishes and baked goods would be as difficult as it was. But, part of that was that I aimed a little too high for fear I would shoot too low. Need to work on my aim next month, and I’m definitely getting help no matter how long my list is. (Mom, Jamie, mark your calendars for this time next month, please. Come watch kids and help me cook.) Wow, that was easy.

OK. Last things on my list….I decided to pass on the Cheesy Potatoes. The garlic mashed potatoes look so yummy; we’ll have those with Easter Dinner instead. (Can you tell I was getting desperate to end my list?)

Not too desperate to cross off the Cheesecake, though! Instead of making one big cake like I usually do, I experimented and made two smaller ones. The reason? I could not find chocolate graham crackers anywhere and since I already had some premade crusts in the pantry, it seemed like a natural tweak. And Nanna (my mom) is coming next week and she doesn’t like chocolate, this made it easy for me to please her tastes, too. I left one cheesecake plain and added half the called for chocolate to the other one. As you can see, there isn’t quite the even distribution of chocolate to vanilla, but that is as it should be. No?

I had quite a few things standing in line for the oven at one point with Chocolate Chip Banana Bread lined up ready to be baked after the cheesecakes. This bread is pretty easy to make and freezes really well. My kids easily go through one loaf at snack time. So, I baked up three loaves and will pop them in the freezer when they are cool. If they last that long!

And I also mixed up a batch of Whole Grain Cinnamon Rolls in the bread machine and packaged them according to Amy’s recommendations for freezing ahead of time. I’m looking forward to see how these work with my recipe.

I’m so glad to be done! Here’s what I did this week. No wonder I’m tired!

Crystal’s Butterhorn Rolls

plus, Crouton Cubes

I got almost everything done on my list, there were no casualties at my house while I did it, and our freezer is stuffed to the gills. Now, to put my heels up and enjoy the weekend. I hope you will do the same.

  1. You did great! I totally messed up my plan LOL! Browned too much ground beef so I couldn’t make mini meatloaves, then I realized too late that I didn’t have any lasagna noodles so I had to improvise and make “Pasta” Bake versus “Ziti Bake”… oh well, we’ve got food to eat, that’s what’s most important!

  2. Have you ever tried making the butterhorns using canola oil instead? Hubby has to watch how much butter he eats, so I was wondering if canola oil would be a suitable substitute.

  3. OMG, yes no wonder you’re tired! That’s enough dishes stocked away for an army. Now you’ll just need to make menus with all those dishes and relax!

  4. Hmm…I’m thinking next month, I’ll make up my white rolls, get some spring veggies frozen, make some jam (we’re out and eating the storebought stuff. Blech.), cook some chicken, shred some beef, make some pumpkin/sweet potato muffins, some banana chocolate chip muffins, and some sunshine muffins, make some red sauce, lasagna, stuffed shells, and make some roasted garlic. I stay away from making beans because, no matter how hard I try, I screw those up every time. I just cannot, for the life of me, prep them so they AREN’T hard. *Sigh*

    Oh, and I’m trying your WW cinnamon rolls as we speak…I need to fast forward to tomorrow morning so I can eat one!

        The one and the same. ;) I was talking this over with my husband, and he mentioned that with canning season coming up soon, as well as my semester ending in May (one more to go, and that stinkin’ Masters’ degrees are done. Yes, TWO degrees at once. Blech.), and he thinks it’s a great idea – mainly because the poor guy can’t even make Hamburger helper.

        I’m really not LAZY, per se. I just like to cook daily right now…seeing as I have only two kids so far, I’ve got a bit more leeway and time than you do, Jessica. ;) But I suppose once I’ve had 4 or 5, something will have to give. :)

      I used the same recipe, just skipped the chocolate part, split the batter, and then added half the chocolate to the chocolate half.

  7. I was wondering if you froze your cheesecake, and if so how did you prepare it for the freezer? My husband and I will be cooking (well, I’ll mostly be cooking and he’ll be tasting) mini-cheesecakes for Christmas this year and I would like to know if I can prepare them in advance and freeze to take off some of the holiday cooking burden. Or do I just have to suck it up and make them the week of?

    Any advice helps, thank you!!
