Poblano Chile Enchiladas
This month has just flown by! I cannot understand where the time went. I’m thankful to have had a monthly meal plan. I’m not sure where I would find the brain cells to store ideas if this weren’t for writing it down.
If you don’t regularly write a weekly or monthly meal plan, try it out this week. I think you’ll be glad you did.

Here’s what’s on our menu this week:
23. Hot Dogs with Homemade Buns, Pasta Salad, Veggies and Dip
24. Pizza Sub Sandwich – a freezer cooking experiment. I’ll let you know how it turns out.
25. Beef Tacos, Fruit Salad - The taco meat is already to go, stored in the freezer with a bag of shredded cheese. Add shells and other toppings, stir up a fruit salad. I like mine layered.
26. Grilled Chicken, Home Fries, Salad, Cornbread – The chicken is marinated and ready to go in the freezer. The sides are all easy ones, especially the Cornbread that’s from a homemade mix.
27. Birthday Dinner – It’s my party and I’ll have Poblano Chile Enchiladas if I wanna.
28. Pizza and ChiChi’s Salad – The sauce, cheese, and other toppings are all prepped and ready to go in the freezer.
29. Baked Chicken, Green Salad, Rolls – The chicken is prebaked and frozen. Rolls and Green Salad are easy side dishes.

My birthday is one the 27th of May as well!! I both loved and hated it as a kid!! Menu looks yummy..

I sat down twice to make a meal plan and didn’t get one done. I am insipred to make one. I have to get one done so I can stop worrying about what I am goingt o make for dinner. Some of youe meals sounds amazing, we may try a few. I have a hard time trying to get organized. I really need tons of help in this department.
I love that you have perfected Chi Chi’s dressing. It looks like a great Italian vinaigrette!
