Ultimate Recipe Swap

This week is tomato week on Good.Cheap.Eats. Tomatoes are a great asset to your cooking as they make the basis of so many great sauces and salsas.

Tomatoes are great fresh, but their flavor is enhanced when roasted. Toss them with some pasta and some basil pesto, and they rock!

Roasted Tomato and Pesto Pasta Salad

3/4 pound pasta, cooked according to package directions
1/2 cup basil pesto
1/2 cup chopped, roasted tomatoes
1/4 cup crumbled feta
1/4 cup black olives

In large bowl, combine all ingredients. Chill.

I am in hot pursuit of fabulous grilling recipes for this summer, now that I have a giant garden of my own! When I saw this recipe, I knew it was a keeper and can’t wait to make it with my own ‘maters.

I am loving that tomatoes are starting to taste like tomatoes, especially at the little farmer’s market place I’ve been frequenting. :)

Sorry, my link doesn’t have tomatoes in it this week. :-( However, I can’t WAIT for my tomatoes to come in an make lots of nummy things! I just made a zucchini tomato topping for ravioli yesterday that was fantastic! Thanks!

That pasta salad looks perfect for the holiday grilling weekend.

Tomatoes no longer taste like tomatoes where I’m at. So, when I make salsa for my tacos I add a bit of honey.

The tomato plants can’t grow fast enough around here. Literally.

They are, however, growing faster than the basil. As long as we have both, my husband told a guest yesterday, than we’re good!
