Wild Alaskan Seafood: A Giveaway

Despite my code name, FishMama, fish has never been one of my favorite foods. I blame it on the numerous Filet O’ Fish Sandwiches that my mother consumed while she was pregnant with me.

Don’t get me wrong. I like fish. But, I’d be more likely to choose shrimp, clam chowder, or prime rib if given the choice. Yet, in my reading about healthier eating, I’m seeing over and over the benefits of making fish a regular part of your diet.

Certainly fish straight off the boat is a fresh as you can get. However, not all of us have access to fisherman’s wharf fish, not even those of us who live practically on the beach. And not all waters produce the healthiest fish.

Frozen fish is a easy way for all of us to add this protein to our diets.

Recently Alaska Seafood contacted me to see if we would try their wild Alaska Cod and Salmon and test their Cook It Frozen! ® (CIF) technique. You know me and my love affair with my freezer. How could I resist?

The Alaska Seafood website has an amazing database of information about their wild, sustainable fishing practices. Not only are they very clear about the quality and safety of their fish, but they also offer a huge variety of recipes, videos, and preparation instruction. If you are timid of preparing fish, never fear, they’ve got you covered. You can even download an app to your iPhone, so that you can easily access this information at the grocery store — or wherever in the world you are.

Currently, the website also hosts a printable coupon for $1.00 Alaska pollack or cod and you can print additional coupons at Coupons.com. A great way to make a healthy protein a little more affordable!

I loved the Cook It Frozen! ® (CIF) technique. Even though I love me some meals in the freezer, sometimes I forget to thaw them in time for dinner, so I was pleased to have another trick up my sleeve. We tested out Alaska Salmon and Cod on our backyard grill and I was really impressed. I rinsed off the ice glaze from the frozen filets, brushed them with olive oil and then seasoned them. FishPapa took over at that point and grilled according to the directions.

The result was tender, meaty fish. It didn’t taste fishy, either. (A fishy flavor is a sign that your fish is not fresh. Fish should not taste fishy.) We were really impressed with the quality of our filets.

We love to grill salmon with a little italian dressing. Most of it gets nibbled away with crackers before it makes it to the table…

My favorite fish is broiled red snapper with creamy lemon sauce – but really any fish will do! My husband doesn’t like fish much so I never want to spend money on it – but if we got some for free maybe I could change his mind. Yum!

I am learning to like fish almost any way. At first I forced myself to like salmon because of the health benefits, and when someone asked, I would tell them I *only* liked salmon. Then someone else asked if I knew that salmon was one of the strongest tasting fish. No, I didn’t know that! So, I tried others and loved them too! My favorite is when my hubby cooks it, so I don’t have to worry about it! :)

We love fish! (well, most of us do anyway) Our favorite is salmon. One way we like it to so cover the fillet in a thin layer of mustard and then with a layer of bread crumbs, (seasoned bread crumbs are good too!) then bake until done!
Another favorite way is to make quick and easy fish tacos!

I have never been a huge fan of fish, but lately as we’ve been striving towards a healthier, more nutrient dense diet, I have been wanting to incorporate some fish into our diets. We’d love to give this high quality fish a try! :)

. . . it’s not very exciting, but it is more affordable for us. . .I look for the wild caught salmon in a can and either make it like tuna salad or salmon patties or into a pasta salad.

Grilled outside. (Then it’s not stinky inside.) Any type of marinade, particularly something with lemon and we are good to go! Terrific giveaway!

I have been enjoying your blog for a few months now, and was tickled when I found out that we share a last name (my maiden name was Fisher!).
So, I have to admit- I grew up in Alaska, so I am actually the lucky beneficiary of annual freezer-fulls of salmon & halibut. I am entering this giveaway mostly for the spatula & steamer basket, but I would happily give the salmon & cod to friends!!!
In regards to favorite ways to enjoy fish, though- we usually use two of these awesome techniques: 1) Yoshida’s marinade (watered down + fresh garlic) and then grilled/baked and drizzled with a little butter/olive oil and 2) Grilled/baked with pesto on top (put the pesto on top before cooking and it makes a nice crunchy layer!)

Poached in sugar water or broiled are my favorite ways. Serve with melted garlic butter. Yummo! I also like a good Friday night fish fry too.

Wow, your CIF Salmon looks delicious! Our family tries to eat fish on a regular basis to take advantage of its health benefits. Living in PA, we usually purchase frozen fish….we just season and bake it with veggies. Great giveaway, thanks!

When my son went to Alaska with his grandparents four years ago, they went on a fishing trip and caught some halibut which they flash froze and sent home to us in southwest Missouri. It was wonderful, it didn’t even smell like fish when we opened the packages. Definitely not the cheapest way to buy fish =( but the tastiest I have ever had.

My favorite way of eating fish is boiled in a thick, delicious sauce that only my mother knows how to make. I’ve tried in vain to reproduce it. But grilled is awesome too.

I’m not an experienced at-home fish cook mostly because my husband isn’t a fan. But I want my daughter to eat it so I want to cook it at home more. I love grilled salmon!

Oh we love fish!!! I like putting cod in tin foil with a little olive oil, lemon slices and seasoning of choice. Throw it on the grill and Poof! Instant fish dinner that is yummy with minimal clean up and no fish smell in the house.

There is a tuna steak recipe we love. Grilled Tuna that is served with a tomato and corn relish. The only time to eat that is in the summer when you can pick both fresh. I believe that is a Mark Bittman recipe.

We used to eat fish 2 x’s a week. When I became pregnant we had to cut that down due to the mercury issues. And now my dd is just starting to like fish in its various forms. So I am hoping we will be able to add more of it back into our diet.

I grew up on an Island off the coast of Seattle in the Puget Sound. Living on a waterlocked Island and my family owning a boat and doing alot of fishing has made me a bit of a seafood snob (only really fresh will do).

I really like Salmon steaks, broiled and then served with mustard sauce (1 part dijon mustard, 1 part brown sugar, mixed up and microwaved for about 60-90 seconds-just long enough to melt the brown sugar, then mixed again. —BTW also great on ham)

I also love fish (most any white fish or salmon) poached in white wine, or in orange juice.

Would love to try this! I’m with you in that I have never really liked fish but am willing to try for the health benefits. So, I don’t have a favorite, but have found Tilapia to be tolerable and enjoyable in this endeavor to enjoy fish:)

My favorite way to enjoy fish is pretty much any way–I love all types of filets. My husband, however, does not share my love of fish. One recipe that I have found that has won him over, though, (at least with tilapia filets) is broild tilapia parmesan. He and my 2 year old son gobble it up!

Mmmm. My hubby makes up this cracker crumb mixture and fries it – good! I can’t bring myself to fry it, so I bake mine and add lemon and herbs. Still tasty, just not as tasty!

When I had my third baby a friend brought over some salmon with a yummy onion mushroom topping. I had to ask for the recipe and it’s become a regular on our menu ever since.

I am just learning to love fish–I am trying to get it in our diet more. I love salmon grilled up with lemon pepper. Or I’ve been making homemade fish sticks with tilapia and an almond/flax crust. Delicious!

Okay. I’ll be honest. I don’t eat fish, but hubby needs to eat it more often. He has horrible cholesterol. When we make it for him, we either grill it or dip it in mustard and bread crumbs and bake it. :)

I am not a fish eater. I enjoy all other kinds of seafood though. But my favorite way to have salmon is when my brother does his magic on it on the grill. Don’t know what he does to it, but it is yummy! I can’t remember my favorite kind (shows how often we have it!) However, I do remember how I like it prepared. My husband uses olive oil, butter and lemon and puts it on the BBQ. Crispy on the outside, tender on the inside. I’d love to try this!

My absolute favorite way is “Fish & Chips” style – as authentic as possible. If I’m making it myself, I tend to broil it with some melted butter and a few herbs tossed on it. Yummy!

When my grandparents were still alive, my grandfather would grill some fish with butter and lemon. More recently, my husband and I have found a couple recipes that we can make in the oven. I’m not a huge fan on salmon so I would love to win this giveaway and try the techniques on the website you mentioned.

We like to drizzle olive oil over our fish and add spinach and herb from tastefully simply. Tastes wonderful.

My favorite homecooked fish is salmon with mayo, onions and ketchup spread over it, then baked in the oven. Sounds weird, but it tastes so good!

Being in a land-locked state, we only do frozen fish. The “fresh” fish here is anything but.

I love salmon simple, with some olive oil and pepper. I like making sauce for it separately but most of the time that’s not even required. If you get good quality fish it will taste great. :) I usually cook mine on the stove top, I haven’t pulled out my grill yet.

I don’t know how he does it, my husband is in charge of grilling, but he had freshly caught trout and tilapia from the store in little tinfoil packets with I don’t know what in them and it was sooo good.

I’ve always enjoyed fish either blackened or fried. When I was a kid my grandparents had a fishing pond and would spend at least a few days sitting quietly by the shore with our poles, so we ALWAYS had fish for dinner at least one night when we’d visit on vacation.

We love salmon on the grill…with just some lemon juice, garlic and onion powder and some oregano. We have the same problem with fresh fish not being readily available (as we live smack dab in the middle of the country…no ocean for miles and miles). My husband loves to grill. When he cooks fish he does it in foil packets and puts is seasonings and the butter inside wraps it up and the grill does the rest of the work. This is a great give away.

We don’t eat fish much because my husband is a “fish snob.” He grew up on the coast, so fish is never fresh enough for him unless we are visiting the coast. I love to eat fish, however, and I should really “force” him to eat it more often since it’s so good for us. In the meantime, the only fish we eat here at home is fish sticks which I fix when he is out of town!

Living in Alaska I have the benefit of having fresh fish all year round. my parents live in Ninilchik which is a little fishing village on the Kenai Peninsula. I love to fry halibut, broil halibut, stick it in the crockpot, I also broil salmon or bake it and sometimes even have it on the grill with teriyaki sauce. Hope you all enjoy it! I found a recipe in Real Simple magazine long ago that said to put about an inch of kosher salt in a cast iron pot and let it start smoking (medium heat?) and then put a piece of salmon on it skin side down and cook for about 12 minutes. So simple (ha!)! Tasty, too!

For salmon we love it spread lightly with mayo and then sprinkled heavily with dried dill weed. Bake in a hot oven (~425) for about 20 min, depends how thick the filets are. The mayo gets kind of crusty and yummy.

For shrimp we love it roasted! Just about 5 min in a hot oven (450) after drizzling with a little olive oil, S&P. Delish!!

We have it on foil. I get Tilapia Fillet, and rinse, add olive oil, seasonings, and put it in a piece of foil with a matchstick piece of potatoe, tomato, carrot, fresh green pepper, or Jalapeno pepper, onion, mushroom, and fold it into a pocket so the steam can cook it, and you can cook it on the toaster oven, oven or a griddle. Soo good with white rice, and veggies.

My favorite way to enjoy fish is fried red snapper prepared by hubby with homemade tartar sauce done by my son. That inconjunction with homemade biscuits and fries. Not the healthiest thing by far but the tastiest and done on occasion. I also like salmon and halibut baked with s&p, and a pinch of EVOO to keep them from drying out.

One of the easiest fish suppers we prepare is to season Salmon fillets with cajun seasoning and roast in the oven at about 400 for 15-20 min. The edges turn out crispy and the inside is succulent. Would love to be able to afford wild Alaskan salmon more often and free would be even better!

I have to admit it, Im like you and would rather have shrimp. Lobster and Crab is at the top the list too. But I’d LIKE to like fish though. I think my fish adversion is based on those nasty fishsticks I had as a kid. LOL. I once had a bite of a friends Salmon in Florida that was cooked on one of those wooden planks and I have to say it was WONDERFUL. My husband loves fish. We make salmon on the grill in individual foil packets. Everyone puts a salmon fillet and whatever veggies they like in foil with a pat of butter and seasonings of their choice. Seal up the foil and pop it on the grill – super easy, super delicious.

We enjoy parmesan crusted tilapia, so easy, coat with a little olive oil, dip in finely crushed seasoned bread crumbs, bake and sprinkle on a little freshly grated parmesan before serving, yummy!

I love to cook fish because my kids and my husband looooove it!! I simply coat the fish with Shake and Bake Extra Crispy and then bake it in the oven. I also like to buy fresh fish from the local supermarket.

I really like fish, but not fried like catfish that many in the south enjoy. I have never prepared fish myself b/c my mom rarely did and my husband is not a fish fan. I would love to change his mind and introduce good fish to my kids. I love grilled fish-tuna, salmon, mahi mahi. Yum!

I make poor man’s lobster. Bring a large pot of water to boil (3-4 qt). Add the juice of one lemon and 3-4 Tbsp. sugar. Cut each large cod loin into 3 chunks (crosswise). (In our house, a serving is 1 1/2 to 2 loins — or 6-9 chunks — per person.) Gently place the fish into the boiling water; reduce to a simmer. When the fish floats, it’s done. Our family enjoys dipping these in butter — like lobster!

My favorite way is any way that my dad cooks it. He usually broils fish but the seasonings are amazing and he changes them all the time. His favorite fish to use is tilapia because my mom doesn’t like “fishy” fish. But if my dad is cooking, I’ll take any kind of fish…It is amazing!

One of my favorite ways to prepare tilapia is to bake it in a large ceramic dish with sliced, tri-colored pepppers and onions, oregano, garlic, salt, pepper, white balsamic vinegar and olive oil. Bake at 425 until the fish is white and flaky. YUM!

I am fairly new to your site. I have been reading and studying all about freezer cooking and have tried a couple of the recipes I have found here and plan to fill my freezer this summer. I love all kinds of seafood. I like to put olive oil & salt on both sides of salmon and sear for 2 minutes each side in a hot pan. Then into the oven for a few minute to finish off. Or I just poach it in a little water on top of the stove. I would love to win this…great prize :-)

I am just beginning to eat fish for the same reason that you do- the health benefits. My husband doesn’t like it though so buying fresh fish isn’t really an option. This sounds like the perfect thing for me especially since as of right now I only eat cod and salmon. I am going to TRY to branch out further in the future but for right now that’s my comfort zone.

As of yet I don’t prepare fish at home- I order it out because of my husband not liking it. But several times a month he works late and I’m on my own for dinner so this would work well for those times.

We love swordfish but since having moved from an area of the country that was always less than an hour’s drive to the ocean to a land-locked state, it’s very difficult to find good fresh fish. That said, some frozen fish is not all that bad. I haven’t tried the CIF technique, so that should help a bit. In terms of a good swordfish recipe: season with lemon & pepper mixture (we use Mrs. Dash or some other salt-free version). Heat olive oil and a bit of butter in a skillet over high heat (watch it), sear your fish, then turn down heat to low/med. Add in chopped garlic and white wine. Cook til flaky.

We love grilled salmon…with teriyaki marinade (we make the teriyaki sauce ourselves). It’s great when you can grill!

My favorite way: Fishing from sunup for them (Bass, Bream) and then battering and frying them over an over campfire.

Hey! Here in Michigan, you gotta love fish! My husband is an avid fisherman (& I would be too if my hands weren’t full of kids most of the time!), and I love getting a hoard of bluegills, baking them in the oven w/ a little butter and a sprinking of parmesan cheese – yummy! I’d love to try the salmon and cod – thanks!
