Pesto Pizza with Tomatoes and Feta
So, did you make a meal plan last week? If you’re not sure how to go about it, read my tutorial on meal planning for beginners. It really isn’t hard and it will save you time and a little stress. Promise.
This week I’m planning to have fun with my kids. And that involves a few outings, a free movie or two, and all around busy days. So, I want dinner to be quick and easy. That means making use of freezer meals or dinners that come together very quickly.
Rather than assign each meal to a day, I’ve created a list of choices for the week, based on items we already have. This is a great way to give yourself more flexibility at dinnertime.
Here’s our meal plan for the week:
Burritos, Fruit Salad
Queso Fundido, Beans, Rice, and Green Salad
Grilled Fish, Mashed Potatoes, Steamed Broccoli
Chili and Cornbread, Veggies and Dip
Pizza and Salad
Meatloaf and Mac and Cheese
Chicken – Bacon Subs, Fruit Salad

Sounds yummy – our days have been busy too, but the time of day we’re not home is supper time (because of baseball practice). We’ve been having our main meal for lunch.
I love queso fundido, but I’ve never made it at home. I can’t wait to try this!
This looks so easy and delicious. I have to remember to keep pizza dough in my fridge!
