Favorite Crockpot Recipe: Shredded Beef

This week on Ultimate Recipe Swap we’re sharing recipes that work well in the slow cooker. When I do big freezer cooking days, I almost always have one or more crockpots cooking away on the counter while I do work on other things.

One of my favorite items is Shredded Beef Filling. It’s a great all-purpose filling that can be added to a number of dishes, like tacos, tostadas, and BBQ Sandwiches. Recently I made a big batch, using three chuck roasts and two slow cookers. After the meat cooked enough to just fall apart in shreds, I froze two pounds of meat for sandwiches and I doctored up the rest.

I added chopped green onion, a can of green chiles, and salt and pepper to taste. Yum! Then I made a few batches of taquitos (recipe forthcoming) and several batches of Beef Enchiladas.

You wouldn’t think that a crockpot had a hand in this, would you?

But it did!

While I obviously baked the rolled enchiladas in a baking dish, the crockpot did most of the work. And if I had really wanted to give my slowcooker a work out, I could have cooked the enchiladas in the crockpot as well.

  1. I love using my crockpot in the summertime! Here in Ohio, we have had one seriously hot summer, with heat advisories and such. No one wants to add more heat to the house by turning on the stove, but dinner needs to happen. I notice a big difference in the temp of our house when I use the slow cooker. Enjoy!

    I love my crockpot, it is like an old friend. I use it twice a week- year around!

    Yesterday I made BBQ Chicken for dinner and I am using the left overs to make BBQ Chicken Salad tonight (to hopefully even out the damaged I caused last night with my chedder bacon ranch mash potatoes)

  9. I use my crock pot all the time, but my favorite recipe is my Monterey Chicken. Partly because it was one of the first recipes I came up with (that tasted good) on my own, but also because it’s done in just 4 hours instead of 8-10 like many slow cooker recipes. I don’t have to get up at the crack of dawn or start it the night before, I can have a leisurely morning and start dinner around noon for it to be perfect by the time we sit down to the table.

    I have been searching the posts to find out how to reheat freezer burritos. I know this shredded beef can be used to make them, but once the burritos are frozen, how do I proceed from there? On cooking day do I defrost first or just pop in oven? Please help. I am also worried about the soggy/ mushy tortilla factor. Anyone have any answers for this as well? Thanks in advance.

      I usually just heat them in the microwave for a minute or two. I haven’t baked them, so I can’t speak to that. Anybody else?

    • @Nia, Wrap them in a paper towel after you make them before they go in the freezer. I like to reheat them in the microwave at 50% for about 5 minutes so they don’t get too hot on the outside and stay frozen in the middle, then a few more minutes on high till heated through. They’ve never turned out soggy on me!

  16. I do this all of the time! I do it with beef, pork, and whole chickens. When ever there a great sale on meat! Then I just freeze meal sized portions in freezer bags. A few minutes in the microwave and you can have already cooked, super tender meat. Adding a jar of sofrito makes really authentic mexican food! What’s great, is you can buy the really cheap cuts of meat and no o e ever knows because it’s so tender! Another great meal is to make chicken caccitore in the crock pot. Just add all of the ingredients you normally would ( chicken parts, red and green peppers, onions, salt pepper, oregano and red wine), set it and forget it for about 7 hrs. Then serve over rice.

  18. Some great ideas here for slow-cooked food. I’ve just posted my home-made refried beans recipe which can be used as the filling for Burrito bake with a 5 minute salsa. That’s about 15 minutes work tops (and only 5 to make the beans before work) for an awesome family meal. Do comment if you try it! I think the slow cooker’s probably the only reason we didn’t starve in the first year of my daughter’s life. Add a rice cooker and you have hands free dinner every night :>)
