Meal Planning: Don’t Neglect Breakfast

Breakfast is the most important meal of the day. You know this. You’ve heard it since you were in elementary school and they made you watch animated nutrition movies. I know. I saw the same movies.

But, the early morning can be crunch time, whether you’re trying to catch the school bus, load up the carpool, or just get the ball rolling at your school-at-home. All too often moms and their families can skip breakfast or settle for less than the best when it comes to that first meal of the day.

Today we start school and I realized that in order to teach my children well, I’m going to need to hit the ground running. And that means staying a little ahead of the game, especially when mealtimes are concerned. I know that a good start on the morning will help the rest of the day have a chance at running smoothly.

This past Saturday, I spent a few hours (3 hours, 10 minutes, to be exact), prepping freezer meals — for breakfast. Those who practice once-a-month cooking, don’t always think about cooking breakfast ahead of time, but it works wonderfully. Case in point:

In about three hours, complete with potty break and refereeing squabbles and locating wayward recipes, I produced the following:

5 dozen scones (Lemon-Blueberry and Maple-Oat)
20 instant oatmeal packets
3 dozen whole grain cinnamon rolls
32 chocolate butterhorns
3 cinnamon twist loaves (experiment)
1 chocolate butter crown (experiment)
5+ cups cranberry-orange granola

Obviously, these will provide the carbs for our breakfasts. I’ll add in fresh fruit, milk, yogurt, hard boiled eggs, and cheese sticks wherever it works. I’m hoping to limit our processed foods but at the same time, make breakfast more convenient.

My children tend to wake in shifts and often I have to choose between making the early birds wait or serving the late sleepers a cold breakfast. I think these breakfasts will provide versatility as well as a hearty first meal of the day.

We start school next week (also homeschooling) and I’ll be trying to jump into school as soon as my 5 month old goes down for his first nap…which means I need breakfast to happen while he’s awake (which can be hard). Only problem is that one likes eggs & stuff and the other likes muffins & pancakes…..

      It’s hard not to become a short order cook, isn’t it? One thing that has helped our family is to make a regular breakfast schedule. Ex: oatmeal on Monday, eggs on Tuesday, etc. Then each person knows he’ll get what he likes part of the time. And then he just endures the rest of the time. LOL.

  9. I really love that your kids are climbing all over you in this…’cause that is so what life is like (as I’m being crawled on by my 3-year-old right now). Very refreshing. Great job on your breakfasts! I can’t wait to get a bigger freezer so that I can hold more than dinners, which are my priority right now.

    Thank you for the inspiration! Those cinnamon rolls and scones sound amazing! We like to get protein as our main breakfast food, so I spent some time this weekend making individual egg sandwiches (egg, cheese, sausage on an english muffin) to freeze. My husband loves these and it works nicely for him to just grab one on the run. Breakfast egg casseroles are another easy thing to throw together for a satisfying hot breakfast. Thanks again for being an example to us all!

    I tend to skip planning breakfasts, and even lunches, for my little ones because, well, they’re little! (4, almost 3, almost 6 mths) We’ve been able to just get by on various sandwiches, soup w/ crackers and fruit….until now.
    My 4 1/2 year old son just started eating like a starving animal. (If this is a foreshadowing of the teenage years, I’m afraid, very afraid!) Actually, I knew we would eventually enter the land of bigger breakfasts and lunches, but I’m in a rut! I’ve been trying to brainstorm/research some good lunch recipes for little ones with growing appetites, without entering over into actually making a large “meal”.
    I’m curious if you have some ideas, or anyone out there really, for making lunch a little bit bigger, with a better variety? What did you do for lunches when you had mostly little ones?

  12. I’m so glad you shared this – I’m sort of new to freezer cooking (I’ve tried and failed before) but somehow doing breakfast things seemed less intimidating to me. We did muffins, froze extra pancakes (my kids like these reheated in the toaster), made some oatmeal packets and I even browned up a bunch of seasoned ground beef and froze it in meal size portions for tacos and things (okay, not breakfast, but I was on a roll so why not? LOL)

  13. My daughter loves to eat “ice cream” for breakfast. That is, homemade yogurt mixed with maple syrup and vanilla, or strawberries and honey and put through our ice cream maker. Easy to keep in the freezer and serve whenever. :) It also is a fast, no-carb solution! Which for breakfast is huge because almost all breakfast foods tend to be carb-heavy.

  18. We love breakfast cookies… so quick, but they can be so nutritious. We also like to make breakfast pockets with eggs and sausage inside. And smoothies with a handful of spinach and carrots thrown in make for a complete breakfast in my opinion. :-)

  19. I just started thinking about breakfasts again this week since our school starts next week. Over the summer, we just have cereal or smoothies or bagels on our own. But, next week, I need to be prepared! This weekend, I plan on making and freezing pancakes, turkey sausage and breakfast sandwiches. My son requested cinnamon rolls, but I have always been hesitant to make them. I might give your recipe a go! Thanks for the ideas!
