Apple Freezer Cooking

Remember that 60 pounds of apples I bought? Well, as much as we love eating them fresh and dipping them in maple-whipped cream, I needed some space in my refrigerator.

So whenever I have too much of something, I process it for the freezer. First I got out my handy-dandy unitasker, similar to this apple, peeler, corer, slicer. Yes, I have one. And yes, it’s only used for one thing: peeling apples. But, that is okay because it saves so much time for bulk apple cooking. Plus, the kids love to watch the apple spin and to eat spiral cut apples.

I filled three crockpots full for Crockpot Applesauce and ended up making three Slab Apple Pies. Plus, my helpers snacked on apples and helped me with the peeling. We still have about 20 pounds of apples, but I think we’ll be able to eat those fresh in the very near future. Eight people can eat a lot of apples. And we just love tasty snacks.

  2. Hubs and I canned 9 quarts of applesauce and 3 quarts of pie filling on Sunday. All the leftover bits (cores and peels) went in the crockpot, then through the food mill. Later this week, I’ll toss them back in the crockpot with lots of spices and apple cider to be apple butter.

    Is there anything better than a hot baking powder biscuit dripping with apple butter? (I might have just drooled a little)

  3. I have spent the past two weeks making great apple recipes…my favorite will always be apple pie. However, I tried a new recipes yesterday for Apple Muffins and they came out delicious. There are chunks of apples in every bite and I doctored it up with some flaxseed and agave syrup to make it healthier. Hoping to share some pictures on my blog and the recipe soon!

    Delish! I dice or mince or shred and store in the freezer for an easy add in to muffins or stews.

  5. Mmm… I love apples! Sounds great! I’m lazy, though… I hate peeling apples. And so I created my muffin recipe that leaves the peels on. :) http://parentingthetiniestofmiracles.blogspot.com/2009/10/lazier-healthier-apple-muffins.html So much easier for me and no one seems to notice…

      Oh, you’d be surprised. Some years we buy up to 100 pounds and process them into applesauce and pies to last for months. ;)

  8. What I love is that fresh apples will last FOREVER. I get them from the orchard and I’ve had apples in the back of the crisper for months and they are still just as good as when I got them. Try that with supermarket apples and it just doesn’t work.

  9. We are big believers in the crockpot applesauce too. While I haven’t been brave enough to can yet, it definitely freezes well! And we also chop some for baked french toast as well as apple streudel.

  11. How fun having all those apples! :) I usually can them into applesauce or apple pie in a jar, which is just slicing apples, putting them into jars and filling with a simple syrup.

  12. I just tried this delicious dipping sauce for apples – perfect for fall. It’s cream cheese mixed with brown sugar. And then topped with caramel syrup. It is so good!

  13. I made your slab apple pie for Rosh Hashana, only I made it in a prepared pie crust (I’m less ambitious than you!). The topping was perfect! I also love apple challah, apple muffins, and apple butter. YUMMY! Do you can your apple sauce? I’m always buying to use in recipes in place of oil, so this might be a good way to use up the 20 lbs of apples I’ve got in my basement.

    One of our favorites is to make a plain cake and use apple sauce instead of frosting. This is one of those cakes that is better the next day,when the apple sauce has had time to soak into the cake.My family has made this for years and it is always a hit when I take it to potlucks or cook out’s.

  15. Canning applesauce is SO easy. I encourage others to try it. I just started canning this year and I am sad I was intimidated for so long. I love how it frees up room in my freezer!     We have about 30 apple trees growing on our property….so I have a lot of apples! I made 23 quarts of applesauce so far and 20 cups of chopped apples for pies and cakes. Also dehydrated some for apple chips. I have a hand-operated food mill, which is wonderful. I quarter the apples with skins and cores left in. Then I steam the apples in a big soup pot, run them through the mill…and that’s it! It is so easy. I do not like to peel apples either. I think this cuts the time in half or more and the food mill is not a big investment. It can be used for processing lots of other things. It will be put to good use when baby #3, due in 3 1/2 weeks is ready for baby food!

  17. I have an apple peeler too, but it is not an unitasker in this house :) I grew up in a large family and I was the potato peeler. Needless to say as an adult I am not a huge fan of peeling potatoes. So when I need a peeled potato I break out this little gadget. Yes I have to peel the tops and sometimes it misses on the sides some, but it does save me some time and energy (or at least I think it does in my mind).

  18. I have an apple peeler too and LOVE it! The best thing is my hubby is intrigued by this gadget and often times will willingly peel all the apples for me while I cut/prep other portions of the recipe.

    He likes to see how long he can get that one single apple peel string. He tries to get one for the whole apple and gets really frustrated when it breaks mid-way. It cracks me up!

    Maybe it’s just me but my apple, peeler, corer, slicer thing is more trouble than it’s worth. It makes a terrable mess, misses most of the peal add eats up a lot of the good part of the apple. Last year I tried using it to make processing my apples faster and ended up just doing it by hand.

    Oh, and just made your slab apple pie on Mon. and it was a huge hit. Thanks for sharing!

  21. Have you ever just sliced and frozen your apples? We do this all the time. Cut them up, flash freeze them and then transfer them to bags/freezer containers. You wouldn’t want to eat these fresh later on, but they work wonderfully for crustless apple pie atop pancakes (http://joyinmykitchen.blogspot.com/2009/11/crustless-apple-pie.html) or granola, or for use in baked goods later on. I love having frozen apple slices in the freezer!!
