Ultimate Recipe Swap
Going meatless is a great way to cut costs and add a little variety to one’s diet. When we were on a drastic budget cut, we often had meatless meals 3-4 times a week. It wasn’t my children’s preference, but we ate well, regardless.

Plus, Mama lost weight because we were eating a little healthier. Not a bad thing at all.

Here are some of our favorite meatless meals:

Tomato and Brie Pasta

Grilled Cheese Sandwiches

Cheddar Cheese Soup with Veggies

Goat Cheese Pesto Pizza with Veggies

Easy Cheese Pizza

ChiChi’s Italian Salad

Beans and Rice

Simple Bean Tostadas

Yes, there’s a cheese theme going, but cheese is good in everything!

My kids are ovolacto vegetarians, so every night’s a meatless night for them :) Their favorite meals are “make your own burritos”, “make your own pizza”, eggs and toast or biscuits, omelettes, quiche, pasta with veggies and cheese, macaroni and cheese, rice with dal and yoghurt, nachos and vegetarian chili with corn chips.

I wish hubby would eat meatless meals! Meatless meals around here are considered pizza night – even though there is pepperoni on the pizza!

Those meals look amazing though!

As an aspiring vegetarian I appreciate this list and am bookmarking it!

We make a very similar goat cheese pizza which we love. Haven’t had it in years, though, since goat cheese is so expensive and we don’t have a Costco membership anymore (but it used to be well worth the price considering how much we saved on goat cheese alone!).

We eat meatless a few times a week, both to cut our grocery budget and to eat more sustainably. Our favorites are different veggie chilis and soups which have beans as their main component.

love these recipes thanks. I am new to following your site and had 2 questions. #1 can you freeze your pizza dough?
#2 when you mention yeast for recipes are you using bread machine/rapid rise or just active yeast?
We tried your cinnamon rolls this weekend. They were incredible! Even my picky girls at them. Thanks.

We rarely go meatless. I don’t eat alot of meat but usually one of the ingrediants. I have shared my potato soup. Will have to try the cheese soup you shared. Looks great and of course you can never go wrong with grilled cheese sandwichs.

With one full-time graduate student and one SAHM running our household we eat meatless all the time. Even macaroni & cheese is a treat given how much cheese it takes. Our favorites are spaghetti with lots of shredded vegetables, tofu stirfry, tamale pie made with beans, and anything I can make with squash, greens, and sweet potatoes.

Ooooh…That cheese veggie soup looks good! Our favorite meatless meals? Any pasta with a veggie, just sautee zucchini, eggplant etc. in olive oil and simmer in a red pasta gravy, serve over pasta. Or an old fashioned Italian dish is peas & pasta. Just sautee peas in olive oil & garlic then add juice back in. Serve over pasta. Lentils are also a great healthy meal with pasta or rice. All pasta dishes must have Parmesan or Romano cheese on top of course! : ) Hmmm…. I’m thinking I need to do a blog on this!

THANK YOU for such a great list of meatless meals. My kids love anything with beans, rice & cheese, which is why my recipe is for Enchiladas, but these look like some great options that we could try out.

Try the Lucky Bean Soup- absolutely the yummiest bean soup I have ever had! You can also just use 3 c of any mixed bean blend from the grocery store and it turns out fine.

1lb of lentils
6 cups water
2-3 tsp boullion
Cook on the stove 15-20 min. until soft.
Serve with Alber’s sweet white(or yellow) cornbread. The recipe is on the box.
Delish! And for our family there were enough lentils left to mix w/ brown rice and cheddar for burritos the next night and lunches.

thank you for the inspiration! I try to eat a few meatless meals a day – and I usually find lunches an easy time to do it. I love making my hearty 9 bean soup – I make it once, and enjoy the rest of the week!

We serve a few meatless meals a week because I used to be a vegetarian, so it is a no brainer for me to throw them together. It’s a bit difficult with the kids, but usually if i offer a grilled cheese with this soup, they love it! This is also frugal if you get the ramen for cheap and purchase veggies on sale. I completely agree – cheese IS yummy in everything. Hubbs hates the stuff (except on pizza & it has to be Sargento cheese) – so, that’s my biggest challenge in cooking, trying to make a meal on the cheap without using CHEESE. Oy. The bean recipes look promising!
