Eat More Veggies (& A Very Veggie Giveaway)

As winter recedes into the past and spring shakes its bright shiny head out, new growth is everywhere, especially in the fields and verdant valleys of your local farms. And the smell of freshly dug earth makes me wish our backyard was bigger than a postage stamp.

One of my life’s goals is to instill healthy eating habits in my kids. They have no problem with dairy or beef. Oh no, no, they don’t. And most grains go down pretty easily. Fruits? Disappear in a flash.

But veggies? I am constantly looking for ways to make vegetable consumption a delicious and fun proposition for my children.

Here are 8 ways that have worked in the past:

  • Stock up on fruits and veggies whenever there are good deals.
  • Provide a bottomless veggie tray.
  • Find quick ways to prep your veg.
  • Let the kids help.
  • Cook them in a pleasing manner.
  • Disguise it.
  • Make it fancy.
  • Plant a garden.

These strategies have been very helpful to incorporating more vegetables into my children’s diet.

I have a few new ones to add:

1. Eat more veggies yourself.

Monkey see, monkey do, don’t you think? If we are doing our best to eat lots of fresh fruits and vegetables, our kids will see that they’re good, that we enjoy eating them, and that we practice what we preach. Ahem.

Try creating a salad bar for yourself in order to make it easier for you to eat well. Your kids may just join you in vegging out.

2. Go with your strengths.

My kids love salad. Every single one of them. They’re not all crazy about all the different kinds of greens in a spring mix, but they are generally very happy with greens, dressing, and a few fruits and veggies tossed in. I realized that if I just count on a salad every night, that is a winner. I can make them all eat salad without much of a fuss. Same goes for veggies and dip. It may not be the most creative or exotic, but it works.

3. Make good choices available.

If you give them junk, they will eat it. ‘Nuf said.

  7. The 2 things that work best with my kids are: 1. Hiding them 2. It seems that if they go out to the garden to help pick the veggies then they are more excited to try them.

    I’ve found that simply OFFERING veggies (whether I like them or not!) will get them eaten.

  9. I put shredded carrots and zucchini in whole wheat pancakes, which my son (2 1/2) happily eats for lunch.

  10. I just have to remember to cut them up to make it easy to grab. We all eat more when it’s quick and easy to get to.

  11. Still working on how to get my kids to eat veggies…they love fruit, but veggies are a different story. I usually just try to play them up and talk about how much I love them…however, they don’t always fall for that. :)

  12. I like to hide a variety of vegetables in casseroles and savory pies. If it is cut up small, they will just eat all of it. And my daughter rarely eats fruit. I don’t get it. She won’t touch anything red! Watermelon…strawberries…nothing.

  14. so far my 2-year-old son loves them as-is. my husband doesn’t really, but if i season them well, he will at least eat some.

  15. My son will eat anything that he can dip in ranch. We’re planting our first garden this spring. Maybe that will get all of us more excited about eating our veggies.

  16. Thankfully, both of my kids are really great vegetable eaters! But, one way that I mix it up is to let them eat peas or corn that is still frozen (we’ve had a lot of frozen veggies this winter) and they think that is the biggest treat!

  18. If we grow them in our garden and the kids get to pick them, I have a fighting chance of them eating them.

    For the other one, still working on it, but if I serve his favorites, he will eat quite a bit. It’s just getting him to eat the rest of the wonderful veggies that is a challenge!

    2 of my 3 kids will not put up That much fuss with at least some/most veggies but my son is a completely different story. He doesn’t like sauces (other than ketchup of course!) or noodles, or rice.. or red meat so I have to sneak veggies in things like juice (V8 splash anyone?) or where ever possible. Have any ideas for the VERY picky?

  22. I make sure there are two things to choose from at dinner. Usually something cooked, and something raw. Then plan B is to always have veggies hiding somewhere in the meal as well.

    One of my boys is a detective – he tries to find and rid the meal of all veggies! We’re still working on him, but the others have started to choose some great veggies to eat.

    I love to put veggies in anything I make, even if it has to be disguised to get them to have them. I love grating zucchini into a lot of dishes–yummy flavor, too!

  25. I have 3 boys, ages 7, 5 and 1. They like most veggies, especially broccoli and carrots, but sometimes I need to work a little harder to get veggies into them. One of my favorite recipes is Chicken-Stuffed Manicotti and it’s stuffed with tons of zucchini, carrots and mushrooms. So yummy, everyone wins!

  26. We like to eat veggie kabobs! Raw veggies on a stick with a little ranch, or grilled kabobs!

  27. All my “big kids” (4 and older) love veggies just about any way they can get ‘em. But the 2 year old, not so much, so I hide them in things like spaghetti sauce and meatloaf. And, of course, cheese and dressings make almost anything good to the man.

    I make green smoothies for my boys (3 and 20 months) for breakfast. I do have to pour them into a colored cup with a lid and straw so they cannot see what color of the “shake.” They LOVE them!

  33. It’s hard to go wrong with cut up peppers, carrots, cellery & cucumbers to satisfy hungry appetites while waiting for me to finally get dinner on the table. Hungry kids will eat there veggies!

  34. I don’t have too hard of a time getting my kids to eat veggies, we plant a large garden and they enjoy eating the fruits of their labor!

  36. I try to offer veggies during that late afternoon time when everyone is kind of hungry but I don’t want to ruin dinner.

    Also, bizarrely, my 3 year old loves them right out of the freezer. Frozen corn, lima beans, and peas, are all enjoyed right out of the bag. Easy peasy!

  41. I have a hearty dislike of veggies, however my kids crave them with no begging. As long as I keep them cut up and available in the fridge with variety of dippers, they snarf away!

  42. I’ve recently started putting out a veggie tray on the kitchen table while I’m making dinner. The kids wonder in and see there is food and they’ll eat a few of the veggies before dinner, whereas when I put it on their plate they aren’t as likely to eat veggies if they’re raw.

  43. Bribery works wonders :) These have no trouble eating carrots and green beans, but don’t expect much more than that. So we reward them for trying new ones by giving them a small treat. It is usually something simple like giving the one who finishes their brocolli first the choice on what game or movie we watch later.

  44. My 20-month-old is currently in the “I’ll eat anything if it has ketchup for dipping” phase. Hey, tomatoes are another veggie, right?

  45. We love salads and we try to make them as colorful as we can! My four-year old asks for salads in her “happy meals!”

  46. They loved eating the veggies we bought at the farmer’s market.

    Also, I have learned not too make too big of a deal out of it: what they don’t eat on Tuesday they may eat three servings of come Friday.

  47. I usually try to “hide” them in other foods for my daughter. She is picky about some vegetables, but others she will eat mixed into something or if she can pick them up with her fingers and eat them.

  48. carrot sticks and pepper strips, and i admit that i consider pickles to be a veggie – that’s an easy one to get them to eat!

  49. My girl loves celery and carrots. If I keep them ready to go in the fridge, she’s more than happy to feel very independent (she’s 4) and grab them herself. Its the one snack I pretty much never say no to.

  50. I make sure that there are plenty of the veggies that they do like on the plate and then sneak in a couple different choices to see if they’ll try them. They love carrots and cucumber.

  51. I “sneak” spinach into meatloaf, spaghetti, and lasagna, and my children (and husband!) don’t mind. However, the best way I have found to get my children to eat their vegetables is to have a special dessert after supper. You wouldn’t believe how quickly those veggies disappear!

  53. My kids love veggies and especially fruit. They eat much better than I was taught to as a kid! I’ve found that if I nonchalantly put a bowl of veggies on the table around snacktime or while I’m preparing the meal, they tend to eat them much better than if they were serve with the meal. Another key is to keep offering the veggie/fruit, even if they don’t like it the first time…..or second me…..or third time ;) My children are a little different, though – they prefer the no dip or cheese (nearly had a riot on my hands when I tried that!), frozen peas, and cold out of the can green beans (I know, eww, right?). In the end, it’s whatever works!

  54. I have a salad lover, too. We really don’t have any problems getting him to eat vegetables, other than tomatoes (except if I tell him it’s pasta sauce ;-)

  55. Can you say “puree”? I love adding spinch and kale to smoothies with our frozen fruits. Everyone enjoys them and there’s never been a flavor complaint. Soups that I can puree are also a great way to add some more veggies in!

  56. weird thing is my girls love to eat them frozen before dinner while we are getting ready. I personally find them disgusting this way, but hey, whatever form, we’ll take it!

  58. Well, my son will eat about anything dipped in ketchup. My oldest daughter likes most veggies raw. My other daughter will eat about any veggie you put in front of her.

  61. I’ve discovered ketchup works for my two-year-old. Green beans and ketchup, anyone?

  62. Gail Gibbons has a book about vegetables that we read a section a day from last year. I added in some ooo’s and aaah’s. I can’t remember if I did it within each section or did them a week later, but we then reviewed (with a little hype from mom) by hunting for purple cauliflower to review flower vegetables, stuffed celery to stem/stalk vegetables, spinach in salad and smoothies for leaf vegetables, and the list goes on (homemade spaghetti sauce for fruit and bulb vegetables, etc). This summer we are growing strangely colored vegetables (purple and green cauliflower, red/purple/yellow carrots, black tomotoes and the list goes on. Strange colors seem to be key here. And a positive attitude about it all. And they love to eat things they remember growing in the garden come winter.

  63. I look for ways to hide pureed veggies in recipes my family enjoy.

  64. We try to make sure that there is a salad once a day & various vegies at lunch & dinner. I try to put the vegies on the table first as I am preparing the rest of the meal. They are often 1/2 gone by the time the meal is ready because some are so hungry they need a little appetizer. :) My evil plot works!

  65. I make hulk smoothies ( baby spinach & fruit) and lots of veggies & fruits with dips. I am blessed that my kids are not that picky:)

  68. We love having a vegetable garden! When my kids are hungry in the summer they literally go sit in the garden and get their own snacks:) And I love how they think they’re being naughty when they eat all the beans!

  69. I found a round tupperware-type veggie tray at the thrift store. It has a lid and divided compartments. I fill it with baby carrots, celery, red peppers, olives, sliced cucumbers, etc. I pull it out of the fridge when the kids come home from school while I prepare them a more substantial snack. It stays out through dinner. They happily munch away and it doesn’t affect their dinner appetites. After dinner, I chop, fill and back to the fridge it goes! Has worked like a charm for us:)!

  75. One of my toddlers likes green smoothies (frozen bananas, spinach and another fruit w/liquid) and the other will eat carrots and most cooked veggies without a lot of fighting. Morning snacks are always a fruit and a veggie so that I know they are really hungry and will eat it…then I know at least they have eaten some veggies that day!

  77. Well, I cut them up and serve with dip, but to get my kids who will not eat vegetables at all. I finely grate them and add them to things like meatballs….carrots and zucchini are great in them and make the meatballs so moist. I also grind up spinach really small, like a puree and add to spaghetti sauce. It looks like spices and does not taste bad!!!

    My 3 year old eats vegetables with no problems. When he first started eating solids, I started him with veggies first, because I figured we all like sweet stuff. So before too long he was chowing through jars and jars of veggies. And 3 years later he will still eat whatever I give him. Should pickiness become an issue, I have no problem sneaking him veggies!

    We get our 3-year old to eat veggies by talking about how strong they’ll make him.

  88. My favorite is a green smoothie most mornings with our breakfast. We’ve been having one most days for over a year now and the kids still clamor for it! 2 handfuls of baby spinach, 1 cup frozen fruit, 1 cup milk (I use almond), and 1 cut up banana – blend.

  95. I take a bag of carrots in the car w/ us wherever we go. When they start complaining that they’re hungry (usually bc we’re passing every fast food chain in existence b/c we live in the suburbs), I pull out the carrots to let them know that’s what they have to eat if they’re really hungry. Sometimes, they take me up on it.
    Honestly, I end up eating them most of the time and that’s good for me, too. ;)

  101. My kids will eat almost any kind of vegetable if they can have ranch dressing to dip it in and I also LOVE to shred/puree fruits & vegetables and add them to lots of different things. Pasta sauce, soups, breads, casseroles, the things you can do are endless!

  103. Because my kids only eat about four vegetables the whole foods way, I deceptively cook, adding purees to everything from sauces to burgers. And I make all my smoothies with a handful of spinach. Yep, the get their veges whether they like it or not.

  105. I love when my kids will eat veggies without fuss, but I also love to hide them in almost everything I cook!

  107. I love to take our kids to the Farmer’s Market or in to Whole Foods where the fruits and veggies just look so wonderful and enticing! They are always up to try something that looks delicious!

  109. Since I’ve been pregnant, veggies are the last thing I want to eat so I puree them and I know my son is getting his veggies too because I make LOTS with veggie purees!

    My kids are big ” dippers” if I give them veggies with something to dip them into they will be more likely to eat them. They love to help make their food as well, so if they help cut the veggies or peel the veggies they will eat more.

    My 2 year old actually likes a lot of veggies. She loves carrots!! But one way to get her to eat something – ranch dressing. She puts it on everything!

  114. I like to throw some veggies into the mix when I make fruit smoothies once a week for breakfast. You usually can’t taste the difference, but there is extra nutritional benefit.

    To our surprise it happened with our youngest child. He happens to love salads and asparagus and different veggies. Our older 3 daughters started trying things because he was eating it and now everyone eats them. So thankful.

    I have one child who will devour vegetables and one who refuses all but corn on the cob. I find I have to puree or hide food in sauces because of that child.

  118. Both of my children love vegetables. They are the first thing they eat. We have always given them a wide variety and they love the majority of them. We have always had a bountiful garden and they love to eat straight from it.

    My son is only 4 mos old now but his father and i have discussed this already and we’ve decided the most important thing we can do is eat more veggies ourselves and always make them available. Plan B of course? Ranch dressing or cheese!

  123. I love veggies and have since a kid. And luckily my family does too. My 4 year old son loves veggies too. His favorite is to dip them in ranch but he will eat corn on the cob, corn and peas too.

  124. Keep offering them. My oldest is a picky eater, and even though he’s almost 12, he’ll forget that he “hates” a food after seeing it enough times. Well, except for beans. Still haven’t won him over there.

  125. I have fun “dips” for my kids to use with veggies…greek yogurt, hummus, salsa, and any type of salad dressing. We also grow lots of our own vegetables.

  126. I give my kids olives. That’s right, if there are some olives stashed right next to all of those veggies – they will stick the olives on their fingers and play with them and then give in and eat their veggies too!

  127. We belong to a CSA as well as do a little gardening. The difference in quality is noticeable, and when my husband and I rave with excitement about each week’s veggie delivery, the kids get curious too.

  134. Thankfully my family eats veggies pretty well but still I also like to add more to our diets. We aren’t fond of squash or pumpkin plain but I get a lot in our tummies anyway by putting it in about everything I bake. Yesterday my yeast bread and cake had pumpkin in it and I also put pureed swiss chard in the bread. My family loved them.

    My kids all love veggies and fruits. They love going to the market and picking out the veggies and fruit. We had a garden last summer and they had a blast picking the veggies. This year we are planting more and adding some fruit trees.

  139. Offer them frequently! And in different forms. Some love them raw, some love them steamed… I try to make sure I’m doing the veggies differently on different nights so that everyone can have their favorite every once in a while!

  140. I tell my girls that the veggies ‘do’ something. Green beans make their feet grow, carrots make their eyes pretty, etc. They are only 2 and 4 so that makes it a little bit easier to get away with. We also have a ’3 bite’ rule. They must take 3 bites of everything on their plate before they decide they don’t like it or are done.

  141. I love this idea…I eat lots of veggies myself (and exclaim how awesome they are), keep serving them until it sets in that they’re not poison, and I’ve also been known to puree some veggies…whatever it takes!

  143. Honestly, I struggle getting the kids to eat veggies, but usually if I put something on it (cheese on broccoli, brown sugar on sweet potatoes) it helps. They also love eating cherry tomatoes off of the plant!

  144. We always keep salad fixings on hand and a variety of dressings. I have also started to keep containers of cut up veggies on hand. I have noticed if it doesn’t need prep work they will eat it.

  145. I have a preschooler and a toddler. The best way for us to get them to eat their veggies is with “dip dip” a.k.a. ranch, etc. :)

    I hide them in muffins and casseroles and pasta. They enjoy eating the ones we grow in our garden more than anything.

  150. I get the kids involved in preparing the veggies. The youngest ones help wash them, while the older ones can peel. We also like to make faces out of our raw veggies.

    We always make fruit and veggies a side with every meal. We also like to come up with fun names for the food – brocolli of course are trees, but my favorite is edamermaids (edamame/soybeans). We also have a 3 bite rule, that you have to try 3 full bites and just because they don’t like it this week doesn’t mean they won’t next week, so continue to bring it in often.

  152. i don’t have to do anything tricky with veggies yet as my one year old pretty much eats most things i put on her plate (my hubby on the otherhand…). she even begs for some of the salad i normally have for lunch. in the future i plan to continue what we are doing and just make sure they are offerred at every dinner and sometimes at lunch. not to mention i eat tons of veggies and i think she sees this as well.

  153. Veggies are not usually the issue with my oldest. She will gladly eat most veggies put in front of her. Fruit is our struggle area. So we do lots of fun shape cuts and dips (carmel, cream cheese, yogurt)

  154. I like to make the veggies part of the main dish — vegetable stuffing bake, pot pie, in the soup, etc. Gets them eaten and saves on cooking and cleanup time.
