Ultimate Recipe Swap

This week we’ve been talking about ways to be better stewards of the resources God’s given us, specifically the earth.

When it comes to food, one of the first things I associate with “green living” is salads. Salads bursting with vegetables are a great way for us to nourish our bodies at the same time as allow us to touch, tast, and smell what has truly come out of the earth.

While I love meat and chicken as much as the next carnivore, rising grocery prices have prompted me to reconsider increasing the number of meatless meals we eat in a week. Salads full of proteins like beans and cheese help make it filling all the while keeping the focus on the greens.

Taco salad is an easy fix, full of protein, and a crowd pleaser. It’s also easy to make meatless. This one combines beans, rice, veggies, and sour cream and salsa for a lighter take on “rice and beans.”

You don’t really need a recipe for this salad. Serving all the fixings buffet style allows your diners to combine the flavors that they want.

I recently discovered Quinoa and absolutely love it. I convinced my family to eat Kale by calling it spinach. They were already eating that so it was an easy move.

We sometimes do beans and meat combo to save money.

I love salads as meals. It’s such a quick meal when the components are all prepped ahead. I freeze grilled chicken to make my chicken caesar salad.

We have a new found appreciation for beans in our house. They are so versatile, filling, nourishing, and AFFORDABLE, not to mention delicious! We’ll have to try a meatless taco salad soon with some yummy black beans!

I love salads! However, I’ve found that lettuce, at $1.49 a head, is just too high for us.

Instead, I grow as much lettuce as I can. It doesn’t grow when it gets real hot here, but right now, it’s big and wonderful! I am growing spinach and 5 kinds of lettuce in my garden. A packet of seeds at $3.95 has 750 seeds of lettuce in it, so even if only a few grow, you will have more than broken even. Those in cooler climates can still plant lettuce this spring, and everyone can plant lettuce again in the fall.
