Though Mother Nature hasn’t quite got the clue in all parts of the world, it is officially springtime. That means warmer weather, longer days, and spring produce!

The options at the dinner table start to change after a long, cold winter. Since we started getting a produce box from Abundant Harvest Organics a few years ago, we’ve seen how ready our taste buds are for juicy apricots and cherries once April rolls around. Peas and radishes? Yes, please, just call me Peter Rabbit.

  1. My tip for saving in the spring is learn about the things you can plant early and over winter. It snowed a couple of days ago here in TN but I have leeks, some herbs, turnips, and beets :)

  2. Please do try rhubarb if you get a chance. there are a plethora of recipes out there for crisps, pies, breads and jams. it is one of my favorites and a sure sign of Spring up here in New England.

  3. Ah, rhubarb! I come from a New England family, but we now live in the South. I mourn the lack of rhubarb in my area. My mom has successfully grown it down here, though. I have yet to decide on my location for it, but when I do….! Last summer after a visit to my grandpa in Vermont, I made rhubarb ice cream with the goods from his garden and my grandma recipe. Maybe you could try that! It was milder in “rhubarbiness” than some other things I’ve had.

  4. My mom used to make wonderful rhubarb sauce. Rhubarb grew in our backyard where I grew up in the Midwest. We would sometimes eat it raw with a little salt on it. Can’t believe I ever did that! Here in the South where I live now, the rhubarb in the stores is rather pathetic compared to what I had a a child.

  5. Rhubarb & strawberry crisp is delicious!!!! But there’s so much white sugar in it. Has anyone ever experimented using honey or another type?

    • I know this comment is fairly old, but I just made a crisp and used coconut sugar and it tasted the same!
