Today’s time-saving tip is somewhat of a no-brainer. Want to save time in the kitchen?

Then choose quick-cooking meals!

Duh. {smacks head} I confess, and my husband would be able to tell you that I tend to be rather ambitious – in life and in the kitchen. I overestimate the reserves of time that I have and think that I can pull off a four course meal in one hour before hockey practice.

Hello, McFly? That ain’t gonna happen.

Over time I’ve learned that some things fall into the category of quick fixes. These would include:

  • eggs
  • pancakes
  • quesadillas
  • beans and rice (but only if the rice is white and the beans are canned)
  • pasta with butter, alfredo, or red sauce from the freezer
  • sandwiches (on store bread, not freshly baked)
  • tacos, but not on homemade tortillas

Sometimes we are our own worst enemies. We overplan, over book, over cook.

  1. We keep raviolis/tortellini and pre-made sauce on hand for a quick meal just in case something goes wrong with the original plan. One day I pulled out marked down chicken for dinner to defrost. As it defrosted, I could tell that it was a bit “off.” I didn’t have time to defrost anything else; having the raviolis on hand was so helpful.

  2. Our favorite quick meals are breakfast for dinner and bubble and squeak! I typically always have all the ingredients on hand and they both come together very quickly!

  3. Our favorite quick meal? Home canned venison is a lifesaver for us! I pour it into a pan with a packet of Lipton seasoning, cook some of that white rice you have listed and boom – dinner time! I usually add a side of home canned green beans or corn to go with it. And maybe some homemade frozen biscuits or cornbread (if we haven’t eaten it all already!)

  4. Did you know that you can buy instant brown rice? I buy Minute Brown Rice but I know there are other brands. It takes 10 minutes to cook.

  5. Our favorite quick meal is fried rice. My son loves it. He says mine is way better than in Chinese restaurants. The dish is fast and easy to assemble and cook. Whenever I fix rice for dinner, I always make extra for fried rice and keep some n the freezer. I add what I may have in the way of leftover vegetables and supplement if needed with frozen vegetables (stir fry mix, carrots-broccoli-water chestnuts). And I add whatever I have on hand for protein: scrambled eggs; frozen shrimp; leftover pork, beef, chicken; A little meat can be stretched a long way in this dish. And it all comes together in a few minutes. Another quick-fix meal I rely on is turkey meatballs in marinara sauce. If I don’t have some easy homemade marinara in the freezer, I keep jars of sauce we like on hand in the pantry. For the meatballs, I mix the turkey with egg, bread crumbs, chopped onion, garlic powder, S&P, and some ketchup and cook them in the marinara sauce for about 15 minutes.

    • One more. Stir-fry some shredded cabbage, shredded carrots, green onions in oil. For extra flavor use a little toasted sesame oil. To save even more time, use a bag of cole slaw mix. Throw in some leftover beef, pork, or chicken. Stir the vegetables into some ramen noodles cooked in half the water and add some soy sauce.
