During college and graduate school, I worked in a few different commercial kitchens. It was a great learning experience for me. I learned some basic kitchen techniques, including knife skills, and was paid to learn. What could be better?

One of the lessons hammered home was that you need to use a sharp knife. You’re actually more likely to cut yourself with a dull knife, than with a sharp one. And you’ll save time, too. It is so frustrating to cut with a dull knife. It seems to take forever.

Sharp knives, on the other hand, make quick work of the dicing, slicing, and chopping you need to do.

After we got married, we returned the 10 duplicate sets of Pyrex we received — there must have been a great sale that month — and traded them in for a great knife set that came in a block with a heavy steel. What we didn’t learn until years later is that the steel does not sharpen the blade, it straightens it. A few years ago we bought a knife and scissors sharpener (affiliate link). Every once in awhile hubs takes care of my knives. I love it! He did it this past weekend. I could hear it in the other room; it was like music to my ears. And kitchen prep the next day? Like a dream.

  1. So true. Makes a difference! Ps it says you are more likely to cut yourself on a full knife – I’m betting you meant dull :)

  2. It makes such a huge difference! Getting high quality knives to begin with helped too. Now we can sharpen them. We couldn’t do that with the cheap set.
