Looking for some easy meals you can whip up this week? We’ve gotcha covered with pasta with red sauce, chili, broccoli & cauliflower soup, chicken enchilada casserole, and chicken with mashed potatoes.
This past week our family kinda played “pick-up” when it came time for supper. Since I threw my back out early in the week, I got thrown off my game. I hadn’t anticipated the issue of limited mobility. But, we survived, thanks to a well-stocked pantry and some back-up meal ideas.
We didn’t eat out once we got home from vacation. This is a minor miracle. Most weeks without a meal plan would not go over so well.
This week’s meal plan  is ready to go. It features slow cooked red sauce, chili, broccoli & cauliflower soup, chicken enchilada casserole, and chicken with mashed potatoes — all filling and comforting foods, perfect for fall. Be sure to read the notes on the meal plan to get tips on making prep easier and reducing your time spent in the kitchen .
