Fruit and Nut Energy Bites - easy and delicious, these no-bake treats are naturally sweetened.

Typically, I share most of my recipes these days in a cookbook (grab one here [4]) or over on Good Cheap Eats [5]. But, this week as part of the DIY on a Dime: Valentine’s series [6], I wanted to make sure all the moms saw the delicious Valentine treats I’ve been concocting.

Energy bars are a big hit around these parts. In Christmases past, the kids have been thrilled to receive one in their stockings. But, I don’t love the price or the ingredients list on those suckers, so I am busting out with some homemade alternatives.

We had some debate over the name. FishBoy13 said they were “energy balls”, the others vehemently shot that down in favor of Energy Bites.

My children and husband devoured the first batch of these energy bites in just a matter of hours, even though there were other sweet treats available. These aren’t “health food” in the sense that they are packed with dried fruit, which we should still eat “in moderation”. But, there is no processed sugar, so that makes for a healthier sweet treat.

These are also super easy to make. I threw a bunch of stuff into the food processor and pulsed until the mixture would stick together. Since there is no baking involved, this is a great recipe to do with the kids, too.

I used unsulphured dried apricots. They are darker in color and sweeter than other dried apricots, but that’s all they are: apricots. There are no additives or things mixed in. Bought them at Costco. The jury’s still out on them for regular snacking, but they go great in this recipe.

Make up a batch of these to package in a cute way and substitute them for the junky Valentine candy.
