  1. Yay! Thank you for posting a (mostly) veggie meal plan on a budget; they are so hard to find. I often get in a rut of eating the same meals week to week.

    Yes thank you so much! My family is vegan and it can be hard to find veggie or meatless meals on a budget. I can easily switch the cheeses and add egg substitute or meat substitutes in these recipes!

  4. I have to say – I can’t imagine how these dinners feed four “generously” and still have even a few leftovers!? Are we counting very small toddlers as a whole person? I have a hungry husband, as well as 12 and 7 year old dancers. This is not nearly enough food after a long day of activity. And while fiber and veggies are very necessary, aside from beans and eggs, there is very little lean healthy protein to boost growing muscles and brain cells. Why are these “popular” meal plans always so skimpy?

    • I’m sorry that you were disappointed. Did you follow this meal plan already? I typically double these meals to feed my family of 8, with four teen boys, and I know they work.

      This particular style of meal plan allows for supplementation of side dishes, while still keeping costs down for folks who are on strict budgets. However, it sounds like it’s not a good fit for your family’s particular circumstances.
