I wish I could say that we were having exotic French cuisine at my maison this week. But, FishPapa’s going out of town for two days, so things are going to be simple around here.
But, truth be told, the food I ate in France, back when I was une jeune fille americaine, was pretty simple. I lived in Bordeaux and visited friends in Toulouse often. Both are in the Southwest of France. Home cooked meals were simple, but delicious: lots of fresh fruits and vegetables, good bread, fresh meats, not a ton of carbs. So, I’ll be working toward simple but yummy this week.
Last night’s dinner was a triumph in that respect. I had some leftover grilled zucchini and summer squash and grilled chicken. So I improvised. While thin spaghetti was boiling “according to package directions,” I heated 1-2 T. olive oil. Then I tossed in 3 cloves garlic, chopped, and a few shakes of crushed red pepper. Then I added the chicken and veggies (about 1-1 1/2 cups worth) as well as some kosher salt and about 1/2 cup diced tomatoes (canned but drained). Once that was hot I poured that over hot spaghetti, sprinkled with parmesan and crumbled feta and a few grinds of pepper. Delish! (The kids had plain noodles with parm, by the way. They don’t go for zucchini.) The dish was simple and light, and made me think of France. FishPapa’s comment was that it was “very Tuscan.” We’ve never been to Tuscany – but, hey, close enough!
Anyway, here’s the menu chez moi this week:
Breakfasts are always the same around here, in case you haven’t noticed. Monday is always oatmeal, Tuesday is eggs, etc. It helps that I don’t have to think too much too early in the morning. And the kids enjoy the variety; not every day is gruel or cold cereal.
snacky lunch: cheese crackers, hard boiled eggs, fruit and veg
corndogs and fries, fruit
BBQ brisket on rolls

chicken in the crockpot, baked potatoes, salad
BBQ chicken legs, macaroni salad, veggies and dip, corn muffins
rump roast with hashbrowned potatoes, steamed veggies
pasta and salad
and at least one night of takeout while Papa is away
