So, how about making some overnight oats for your next meal prep?

Recently I played with this overnight oats with coconut milk, a recipe adapted from Dole, that’s really fun and different from other recipes I’ve seen. Not only is it a hearty breakfast, but it’s also completely plant-based.

Ingredients

Here’s what you’ll need to make overnight oats with coconut milk:

rolled oats – For best texture, use old fashioned oats.

coconut milk – Since this is so rich, I recommend 1 can light coconut milk, diluted with water to equal 3 cups

chia seeds – Chia seeds will help the milk thicken a bit and add fiber and protein.

fresh fruit – You can use bananas and berries as well as any other fresh fruit you like. Choose seasonal fruit for best pricing, but frozen will work just as well and can be cheaper. If you use pineapple, you can have a pina colada overnight oats.

ground cinnamon – Cinnamon adds a warmth as well as a number of other health benefits.

nuts or seeds – Use whatever you like and/or have on hand.

coconut – Coconut shreds enhance the coconut flavor of the milk.

sweetener of choice – You can use honey or maple syrup or another sweetener, to taste.

Variations

Absolutely! Feel free to vary the fruits, nuts, seeds, and spices based on what you have and what’s in season. Here are some flavor combinations that would be tasty:

  • blueberries, lemon zest, and nutmeg
  • pears, red grapes, and cardamom
  • cherries, raspberries, and a wee bit of dark chocolate
  • apples, walnuts, and raisins
  • pineapple, mango, and other tropical fruits
  • and of course, the berries, bananas, and cinnamon as listed below

Step-by-Step Instructions

Here’s how to make overnight oats with coconut milk:

  • Combine the oats, ground chia seeds, and cinnamon in a medium bowl.
  • Layer the oat mixture with the bananas, berries, nuts, and coconut to fill pint-sized mason jars. Pour the milk over the top, dividing it equally among the jars, and seal the lids. Refrigerate the jars overnight.

To serve: Remove the jars from the refrigerator and drizzle the oats with honey or maple syrup, if desired.

Prepared food is good for up to 4 days in the refrigerator. Keep in mind that the textures may change the longer you let the berries, bananas, and oats sit in the milk.

  • 1 can coconut milk diluted with water to equal 3 cups
