I’m slowly learning that the bulk of my time is often spent in the kitchen. And not always with pleasure. I love to cook. But, cooking for nine can take its toll.

As a result, there has been at least one night a week in the past few weeks when we’ve resorted to take-out because the day had been crazy, and I was just too pooped to set one foot in the kitchen. With so much else to do, I knew my two hours of cooking and clean up could be better spent. But, obviously, making fast food a habit will not help us stay out of debt. So, I’m hoping that my meal plan this week will be more of a success and that I will be so organized that the siren song of Panda Express won’t even tempt me to veer off course.

Last week’s shortcuts were helpful, but I’m hoping to go a little farther. We’ll be moving by the end of this month, and so it would be good to have less food to move. Maybe I shouldn’t grocery shop this week? {Gasp.} Yes, it’s one of the highlights of my week, even if it falls on date night. But, the food won’t be a good deal if on moving day it has a hard time transferring between House A and House B. With temps in the triple digits, it’s likely that “hard time” could = reality.

Here’s what’s on the menu this week:
Monday – holiday, hubs is home
Crystal’s Lazy Granola, yogurt, and fresh fruit
free Chick Fil A
Salsa Verde Beef Chili (crockpot does the work)

Apples and Oatmeal
Sandwiches, Veggies and Dip, Fresh Fruit
Pasta with Red Sauce, Cauliflower, Salad, Biscuits (make double pasta for Wed’s pasta salad)

cereal and fruit
Pasta Salad
Grilled Tri-tip*, Cheesy Potatoes, Salad (FishPapa cooks the meat, other dishes can be made ahead)

Chocolate Chip Muffins* and Red Banana Smoothies
Snacky Lunch
Lasagna, Green Salad, Foccaccia*

Waffles and Fruit
Sandwiches on Foccaccia, Veggies and Dip, Fresh Fruit

Hot Dogs on Homemade Buns
Beans and Rice

  1. Your menu looks great. I am going to try that Salsa Verde Beef and also your smoothies, they both sound great!

  2. Whenever I am feeling burned out on cooking, I make breakfast for dinner. Somehow it seems different enough, and I make some combination of whole-grain waffles, pancakes, a breakfast meat, fresh fruit, smoothies, hash browns, or omeletes. A breakfast casserole would work nicely for a big group of nine.

  4. Good luck eating from your cupboards! I always did that in college. The only down side is that the first few weeks after you move you buy extra because the cupboards always look bare.
