Meal Planning – From the Freezer

Chicken and Wild Rice Bake

This weekend after I inventoried the freezer, I set about putting together our meal plan for the month. My laptop was still drying out from an encounter with a bottle of water (don’t ask) and I was fighting off The Head Cold of the Century and nursing a bad back, so it took much longer than expected.

However, after a trip to Costco and an impromptu freezer burrito endeavor (don’t ask), I feel confident that should I never recover from this cold or my old, decrepit back, at least we will eat well.

With my inventory in hand, I put together 31 dinner menus (some were duplicates). Then, I printed out a copy of the Monthly Meal Plan Grid so that I could hang it on the fridge. Consulting my fall themes, I plugged things in.

Here’s what I came up with:

5. Pasta with Red Sauce, Caesar Salad, Cornbread
6. Grilled Chicken, CSA Veggies (TBD), Rolls

8. Costco Pizza
9. Crockpot Pork Sandwiches, Veggies and Dip, Fruit
10. Lawnmower Taco, Green Salad
11. Pepper Steak, Rice, Salad
12. Pancakes, Turkey Sausage, Fruit
13. Pasta with Red Sauce, Roast CSAVeggies (TBD), Salad
14. Baked Chicken, Quinoa Pilaf, Veggies, Cornbread
15. Pizza Night
16. Burgers, Veggies and Dip, Fruit Plate
17. Hot Dogs, Fruit Salad, Veggies
18. Pancakes, Turkey Sausage, Fruit
19. Carnitas Tacos, Beans and Rice, Green Salad
20. Grilled Chicken, Quinoa Pilaf, CSA Veggies (TBD), Baguette
21. Caribbean Pork, Rice, Veggies, Biscuits
22. Pizza Night
23. Roast Chicken, Mashed Potatoes, Veg, Cornbread

  4. I hear you about the head cold! I’m fighting something off right now, and I did not feel like planning meals for this week, but I did anyway. I figured that if I had dinner planned, I could wing the baking and making of other food each day depending on my mood and time. Just can’t wing dinner!

    How does your family like the Costco pizza? We tried the different frozen pastas like the tortellini which were okay. I just wanted more flavor. I’d love a pizza that I could just throw in the oven at the last minute if my dinner plans don’t work out. Which happens sometimes.

      @Barb @ My Daily Round, my oven is way too small for Costco’s take and bake. We buy the $10 pizzas from the food court. They will make them to our specifications, making it the best deal in town.

  6. How do you plan a whole month at a time? I can only go about a week or two in advance and even then I end up rearranging a lot depending on our day-to-day circumstances…. does that happen to you or can you pretty well stick to it? just curious. 🙂 I have really been liking my theme nights though- I’ve stuck with it for about a month now, longer than I have ever stuck with any other method of meal planning!! and my husband is loving it- he keeps commenting on how he loves that I always have a plan (a lot less eating out!) and so much variety! so thanks for the suggestion! 🙂

    Just wondering I would love to plan a month in advance dinner is crazy with school and kid activities. Do you buy all you need from Costco at one time and then shop a little each week for fruit etc.?

      @Brenda, no. In fact, I rarely buy meat at Costco. I just stock up on local grocery store sales each week and stash it into the freezer. When chicken breast goes on sale (<$2/lb) I buy 4-6 packages. Same with other cuts of meat that we regularly use. After a few weeks, I have a stockpile to plan from.
