Chicken and Wild Rice Bake
I love the start of a new month. It’s a chance to start over. I feel like I got a clean slate to work on. Plus, with freezer cooking this weekend/week, I’ll have a full freezer and hopefully, less kitchen work in the coming weeks.
Here’s how freezer meals and real life should intersect for us this month:

That chicken and wild rice looks great. I have a ton of Uncle Ben’s wild rice I got for free during triple coupons. Would you just switch that out for the rice and thyme? Thanks!
Yes, that is exactly what you would do. Just measure their rice and adjust your liquid accordingly.
wow you plan the whole month ahead. thats great i would love to be able to do that. i am starting slow with a week at a time and will work my way up. i love your blog!

Looks like a delicious month! I’ll keep these ideas in mind (especially the Asian chicken salad) for next month, when I’ll be looking to infuse more variety into my plans once again.
I am trying to keep things simpler this month, and resist the urge to try new recipes for a little while.
I’ve been wanting to make chimichangas for ages, ever since that episode of Two and a half men. I’ve never had one myself, but it really is a fun thing to say! And with a 4yo and an almost 6yo, that’s half the battle won! Thanks for the recipe!

I have now made the Chicken and Wild Rice Bake (including using your herb vinagrette recipe) and the Mustard Grilled Chicken. They were both big hits in our house (including the kids)! My hubby loved the mustard chicken so much tonight that I am making it again tomorrow night! Thanks for the AMAZING recipes!
