Mustard Grilled Chicken (Recipe Swap: The Healthy New Year Edition)

Not only is New Year’s a time for goal setting and getting a fresh start, it’s also a time to purge that Christmas candy from the pantry. Oh my! We had a little too much fun around here the last month or so. My jeans feel a lot tighter than they did back in early November. When I have painful indentations on my tummy at the end of the day, I know it’s time to make some changes.

Unfortunately, our food tastes naturally gravitate toward things that are cheesy, fatty, and yummy. I have to be careful about what meals I plan. And that’s hard to do when I’m trying to juggle the Time, Comfort, Budget scenario.

I’m hoping that you have some great recipes up your sleeve that you’re just waiting to share today. The only criteria is that it be somewhat healthy.

As for me, despite all my gluttonous cooking habits, I do have some recipes in my repertoire that are spa-quality. This is one of them. I hope that you can enjoy it sometime soon, weather or indoor grillpans – permitting.

Mustard-Grilled Chicken

We discovered this recipe here when we were newlyweds and have tweaked it over the years. It is absolutely delicious, particularly so if you have time to marinade the chicken breast for several hours. Serve it with brown rice pilaf, steamed veggies, and a salad for a yummy, healthy meal.

1/3 cup Dijon mustard
1 teaspoon cayenne pepper
2 Tablespoons red wine vinegar
1/4 cup oil of choice (grape seed is great because it can tolerate high heating on the grill; olive is good, too)
6 chicken breast halves, rinsed

Combine mustard, cayenne, and vinegar. Whisk together as you add oil in a thin stream. Place in a large zip-top bag. Add chicken and seal bag. Massage chicken well to distribute marinade. Place in a container in the frig for several hours. Cook over a hot grill.

    I don’t know if I have a recipe. I don’t use them very often except for guidelines. I am a “a little of this and that” kind of girl! We grill A LOT, but hey we are Californians! I also, just choose to use whole ingriendients when possible. Brown rice, whole wheat tortillas, real cheese and butter (as opposed to Cheeze Whiz and margarine!). I make my own whole grain dinner rolls. Anyway you get the idea. My goal is to use less salt in my cooking though. I second grape seed oil. Wonderful for sauteing too.

    i couldn’t decide between the carrot/cabbage slaw or the whole grain waffles with oats, but since you have a waffle one already, went with a veggie packed salad.
