This Week on URS

Loving the collections of recipes that we’re creating on Thursdays! If you haven’t already, check out the Meatless Main Dishes that readers submitted last week.

My sister submitted one of our very favorites: Pasilla Enchiladas. This is the one dish that FishPapa and I divide “even Steven” to make sure no one hogs them all. They’re definitely worth arm-wrestling for. They’re also a recipe that fits this week’s theme:

Mexican Food.

In light of upcoming Cinco de Mayo as well as all the sales on Mexican food items that are going on, it’s a great time to feature some tastes from South of the Border.
