Now that the birthday season is over, I feel like I can breathe a little more freely — and gear up for FishBaby’s arrival in 10 short weeks! Wow! Stay tuned, ’cause I’ll give you a peek or two at Once a Month Cooking as I endeavor to stock my freezer before my new FishChickie gets here. Yes, I am a crazy woman.

This week is, hopefully, going to be a relaxing week of wrapping up the last few details of school and getting some organization back into our lives. We’ve started to overhaul our basement and get it ready for finishing — on a tight budget. All that means a few sandwiches and crockpot meals!

Here’s the lowdown:

Krispy Kreme (with coupons!) for Father’s Day
oatmeal and carmelized apples
eggs and toast
maple scones and smoothies
waffles and berries
pancakes with Papa

FishPapa’s Favorite Picnic
Turkey Sandwiches, fruit
PB&J, fruit
snacky lunch: cheese, crackers, lunch meat, hard-boiled eggs, fruit (Salad for ME!)
chicken nuggets, veggies and dip, fruit, rolls
beans and rice
crockpot chili and tortillas

pasta, caesar salad
chicken in the crockpot, baked potatoes, vegetables
hamburgers, rice and bean salad
peanut butter chicken pasta
bean burritos and tostadas
grilled chicken breast, pasta salad, caesar salad
pizza, salad

    Can I come over and help you with the OAMC? I’d love to do that and was going to offer to help you make some freezer meals even before I knew you were planning to (though, knowing how organized you are, I had a pretty good idea you’d be doing this!).

    CP, How did you know I was going to ask that of you anyway??? 😉 Maybe we can find some childcare….I don’t think I can handle OAMC with 7 children underfoot. Yikes!
