Menu Planning This Week and Next

Since we are heading West in less than 2 weeks, I’m dancing the fine line between frugality and making sure there’s enough – but not too much – food in the house. I don’t want to waste money on things we won’t eat before we leave.

I’m a little sad to see the cupboards become bare. But, it just doesn’t make sense to pay for cargo space on stuff we should just eat up before we go.

So I decided to simply make a list of the meals I can make based on fixings I already have on hand and see how far we can stretch it. The following should almost cover lunches and dinners for the duration. And I’ve already told the kids there’s dessert every night so that we can eat up the stockpile of ice cream we have in the freezer. How’s that for Mother of the Year?

Grilled Chicken, Rice Pilaf, Veggies x 2
Pasta and Spaghetti Squash with Red Sauce, Garlic Bread, Green Beans x 3
Chicken Nuggets and French Fries, Fresh Fruit
Bean and Meat Crockpot Enchilada
Hamburgers and Fries x 2

Homemade Macaroni and Cheese
Homemade Pepperoni Pizza
Paso Mom Tacos
Pasta Salad
Peanut Butter Chicken
Snacky Lunch x 2
Bean and Cheese Tostadas
Taco Soup

  5. This doesn’t have anything to do with your menu but I was wondering if you could say what state it is that you are moving to. I’m just curious because if you’re moving to my state, I’d love to eventually meet you! I live in the west too but I’m not sure if you mean west as in west coast (California) or west as in another state. By the way, I’m in WY!
    I so admire you for moving with SIX little children! Yikes! I just had a baby around the same time as you but it is only my third! I can’t imagine how busy you must be right now. I so enjoy your posts and your blog!

    Thanks for your encouragement. I’m glad to hear I’m saying something good. I feel like I’ve got major writer’s block these days.

    Anyway, we are moving to the Coast, San Diego to be exact. It would be fun to meet up. I will keep that in mind should we ever head to Wyoming. My brother-in-law lives in Montana, so it could happen. ;)
