Since we are heading West in less than 2 weeks, I’m dancing the fine line between frugality and making sure there’s enough – but not too much – food in the house. I don’t want to waste money on things we won’t eat before we leave.
I’m a little sad to see the cupboards become bare. But, it just doesn’t make sense to pay for cargo space on stuff we should just eat up before we go.
So I decided to simply make a list of the meals I can make based on fixings I already have on hand and see how far we can stretch it. The following should almost cover lunches and dinners for the duration. And I’ve already told the kids there’s dessert every night so that we can eat up the stockpile of ice cream we have in the freezer. How’s that for Mother of the Year?
