This past week our family kinda played “pick-up” when it came time for supper. Since I threw my back out early in the week, I got thrown off my game. I hadn’t anticipated the issue of limited mobility. But, we survived, thanks to a well-stocked pantry and some back-up meal ideas. 

We didn’t eat out once we got home from vacation. This is a minor miracle. Most weeks without a meal plan would not go over so well.

This week’s meal plan is ready to go. It features slow cooked red sauce, chili, broccoli & cauliflower soup, chicken enchilada casserole, and chicken with mashed potatoes — all filling and comforting foods, perfect for fall. Seasons change in the life of raising kids and apparently I was the last one to get the word this time, so I need to up my game and get back on track with my meal planning.
