Don’t you just love it when your kids get excited about cooking or baking in the kitchen? My girls particularly love baking, but since I’m wary of them getting too much sugar, I’m always on the look-out for low-sugar and naturally-sweetened treats that they can bake and enjoy whole-heartedly.

In my research, I’ve been continually impressed with Dole’s commitment to creating real food recipes that families can enjoy making and eating together. So how excited was I to find that Dole has done it again. In collaboration with Disney, Dole has developed a collection of recipes to celebrate Mickey’s 90thanniversary!

You may not know this about me, but Mickey and I go way back!

Yep. I was a major Mickey fan as a child. I watched the Mickey Mouse Club reruns – with Annette, of course! Disneyland was a yearly stop for our family. And even today, his presence is felt throughout our house. Disneyland is still a yearly stop for our family, including a few tastes of the famous Dole Whipwhich is like heaven on a spoon!

And there’s one little girl in the house who was thrilled to get a Mickey-themed apron, toque, and baking tools. She and the Mickey doll have been inseparable! So fun!

There are all kinds of celebrations in store over the next few weeks as Disney and Dole celebrate 90 years of the most famous cartoon character in the world.

In fact, you may find Mickey throughout your produce section as a variety of Dole fresh fruits and vegetables currently feature Mickey Mouse throughout the decades.

And the celebratory recipes are certainly worth a gander.

Take a walk down Memory Lane with Mickey with updated classic recipes such as Feta Toon-a-Noodle Casserole, Gosh-Golly Gee Dole Pineapple and Carrot Smoothie Remixand a Steamboat Willie Apple Waldorf Salad.

That salad? Yum! It’s on my list of recipes to try.

Since we are big Dole and Disney fans, I baked up this recipe, inspired for Mickey’s 90thanniversary: Coco-Nana Birthday Cupcakes!

How cute are these banana cupcakes topped with coconut whip and dark chocolate banana bites for ears? It’s a Mickey fan’s dream come true.

I love it that Dole makes a point to use healthier fats, natural sweeteners, and dark chocolate. Case in point: these Coco-Nana Birthday Cupcakes.

All too often you see cute, whimsical recipes designed to appeal to kids, but that also happen to be nutritionally bankrupt. So silly!

That’s why I love this collaboration of Disney and Dole, Powering the Hero Within, that marries Dole’s fruits, vegetables, and nutrition with the most popular Disney films and characters. It’s still fun and flavorful and has real fruit too!

These cupcakes are simple to make. The cake batter is extremely easy to mix up; there’s only one bowl to wash; and the finished product is super cute, appealing to a child’s imagination.

Coco-Nana Birthday Cupcakes Recipe

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1 cup honey
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 medium ripe DOLE® Bananas mashed
  • 1 large egg
  • 1/3 cup olive oil
  • 1 teaspoon vanilla extract
  • 1/3 cup dairy-free coconut whipped topping
  • 24 DOLE® Banana Dippers slightly thawed

Instructions

  • Preheat the oven 375°F. Line a large muffin pan with paper liners.
  • Place all the ingredients into a food processor fitted with a metal blade or a blender. Cover; blend until smooth. Fill muffin cups one-half full.
  • Bake 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cupcakes 10 minutes; remove from pan to a wire rack to cool completely.
  • Spoon a rounded teaspoon of whipped topping on each cupcake, place 2 banana dippers on each side of the whipped topping, and serve.

Notes

Note: if you have standard muffin cups, you may have extra batter. Just bake more cupcakes! Extra cupcakes freeze well.
